so how do you like your coffee? Strong or light? Decaf? Well this cake would please all! (: Unless you are the kind that only drinks espresso. haha Then well, you can add more coffee to this recipe and you will also be happy!
Thanks to Eat and Be Happy, I got to come across this recipe and being a big fan of both coffee and streusel. I tweaked the recipe a little but the texture of the cake with the combination of the crumble – it’s SOO GOOD! (:

so here’s the recipe.

Ingredients :
2 cups sifted all purpose flour, spooned in and leveled
1/2 cup lightly packed brown sugar
1 tbsp baking powder
1/2 tsp salt
125g unsalted butter, cut into cubes, at room temperature
1 large egg, at room temperature
2/3 cup milk, at room temperature mix with 2 tsp of instant coffee powder
1 tsp vanilla extract
Streusel
125g unsalted butter, cut into cubes, at room temperature
1 1/2 cups plain flour, spooned in and leveled
3/4 cup sugar
1/2 cup rolled oats
1/2 tsp baking powder
1/2 tsp salt
Steps :
1. Preheat the oven at 175C. Line the cupcake pan with cupcake cups.
2. For the crumble, whisk the dry ingredients together in a large bowl. Add the butter cubes in and rub the butter into the dry mixture with your fingers till the mixture is well combined. Set the crumble aside.
3. For the cake, Whisk the flour, brown sugar, baking powder and salt together in a large bowl. Add the butter cubes in and rub the butter into the dry mixture with your fingers till the mixture is well combined.
4. In another bowl, whisk the egg, milk and vanilla together. Make a well in the centre of the flour mixture and pour the egg mixture in. Whisk the mixture till batter is thick and smooth.
5. Pour the batter into the cupcake cups and smooth the top. Sprinkle the crumble on top of the batter and lightly press it down.
6. Bake the cake for 15-20 minutes or till the top is golden brown and a cake tester inserted into the middle comes up clean. Remove the cupcakes from the oven and leave it to cool on the cooling rack.

Hi. do you know how many cupcakes this make? My batter made 12 but had so much extra crumble. So I made another batch of batter just to finish the crumble. It came out so good anyway. Just wish I could have more than 2 a day. Thanks for the recipe.
I usually make about 15? Sometimes even more depending on how generous I am with the batter per liner!
Well making more wouldn’t hurt i guess! More to eat! (: Glad you liked it!
