Melting Moments with Lemon Buttercream

ever wanted to make something that takes really little time and yet tastes so good that you would squeeze in time just to make them?

Having more time on my hands now, all I want to do is bake. haha so cupcake one day, today cookies!

to be honest, I was never a cookie person (baby is!) normally my cookies don’t come out good. but this one is simple enough to taste yumms!

so give it a try! (: Then you won’t have to pay $2 (or more) for one at a cafe! haha

(Adapted from The Wicked Noodles)

Ingredients :

250 grams butter, softened (about a cup)

50 grams icing mixture/sugar (1/4 cup)

1 teaspoon vanilla extract

250 grams plain flour (about a cup)

50 grams cornflour (1/4 cup)

Steps :

1. Preheat oven to 175 degrees Celsius (350 degrees Farenheit).

2. Cream the butter and icing sugar together until light and fluffy.

3. Add the vanilla extract and beat well.

4. Sift the flour and cornflour together and add to the butter mixture.  Beat until the mixture comes together.

5. Divide the mixture into 30 even portions.  Roll each portion into a ball and use a fork dipped in cornflour to flatten. (Don’t worry if it seems a bit sticky, it can still be rolled into balls! Super amazing!)

6. Bake for 12 – 14 minutes or until a pale gold color.

oops. remember not to put too many too close together! haha mine was overcrowded.

7. Allow to cool and then sandwich with lemon buttercream (recipe follows).

Lemon Buttercream

75 grams butter (1/3 cup)

1 cup icing mixture

1 teaspoon vanilla extract

2 tablespoons lemon juice

1 teaspoon lemon zest

Steps :

1. Beat the butter and sugar until light and fluffly

2. Add the vanilla, lemon juice and lemon zest and beat well. I found it easier to work with after leaving it in the fridge for 15-20mins.
