Hazelnut Olive Oil Cake

Hooray! It’s the weekend so let’s celebrate with cake! What better way yes? heh I don’t think anyone can really resist cake, even more so when it’s a gluten free and (almost) healthy one!

Is there a particular cake that you will never get tired of and would always go-to cause you know it will not fail you? I definitely do! This is one cake that I know that would definitely be a crowd pleaser! The chocolate olive oil cake by Nigella Lawson is simple, delicious and did I say delicious? Whenever I need to make a birthday cake for a close friend, I always turn to this recipe, top them with fresh raspberries and dust with icing sugar and viola! All ready to be consumed and put smiles on people’s faces!

All along, I’ve made it using almond meal, but I few weeks back when I needed to bake a cake for a close friend’s 21st, I had a eureka moment. Why not use hazelnut meal? It would be like a fudgey and moist… nutella cake! How good does that sound? I was so so excited to give it a try!

And it came out just the way I envisioned it to be. Soft, really chocolatey, and so fudgey and moist! OOhhh la-la! It can definitely make one of the sexiest and most decadent chocolate dessert that I’ve ever made! The hazelnut meal elevated it to a whole new level! Definitely gonna stick to using hazelnut meal now. hehe One slice is never enough!

So give this a shot if you love nutella. You will definitely be hooked! It’s gluten free and if you are on a paleo diet, just change the sugar to 1/3-1/2 cup honey and you’re good to go!

Hazelnut Chocolate Olive Oil Cake (adapted from Nigella Lawson)

150 ml regular olive oil (plus more for greasing)

50 grams cocoa powder (good quality, sifted)

125 ml boiling water

1 tsp vanilla bean paste

150 grams hazelnut meal

½ tsp bicarbonate of soda

pinch of salt

170 grams caster sugar (or 1/3-1/2 cup of honey if you want it to be paleo)

3 eggs, room temperature

1 small punnet of fresh raspberries (to top the cake)

Icing sugar, to finish

Steps :

1. Preheat your oven to 170°C/gas mark 3. Grease your springform tin with a little oil and line the base with baking parchment. Measure and sift the cocoa powder into a bowl or jug and whisk in the boiling water until you have a smooth, chocolatey, still runny (but only just) paste. Whisk in the vanilla extract, then set aside to cool a little.

2. In another smallish bowl, combine the hazelnut meal with the bicarbonate of soda and a pinch of salt.

3. Put the sugar (or honey), olive oil and eggs into the bowl of a freestanding mixer with the paddle attachment and beat together vigorously for about 3 minutes until you have a pale-primrose, aerated and thickened cream. Turn the speed down a little and pour in the cocoa mixture, beating as you go, and when all is scraped in you can slowly tip in the hazelnut meal mixture.

4. Pour this dark, liquid batter into the prepared tin. Bake for 40-45 minutes or until the sides are set and the very centre, on top, still looks slightly damp. A cake tester should come up mainly clean but with a few sticky chocolate crumbs clinging to it.

5. Let it cool for 10 minutes on a wire rack, still in its tin, and then ease the sides of the cake with a small metal spatula and spring it out of the tin. Leave to cool completely and place the whole punnet of fresh raspberries neatly on the cake and dust with icing sugar. Serve with a side of freshly whipped cream or a scoop of your favourite ice cream!

Good evening dear readers. Sorry for the long pause again. It’s the holidays and I try and take this opportunity to spend a bit more time with the Mr and explore a little more of Melbourne. So watch this space to see what I’ve been up to in the post to come! (:

I’m not sure about you guys, but I do go through flavour phases and one of which is matcha! So much so that we even held a matcha party to celebrate the endless uses of this brilliant ingredient that is so full of antioxidant! What could be better yes? Here is a recap of the spread we had that day! Be warn, you might crave for some dessert after this!

This was a beautiful bowl of matchamisu by Winston. Layers of matcha sponge with azuki beans, delicious!

These my dear readers are the perfect matcha macarons by Eat Play Shop!! Look at how amazing they look? Spot on with the feet, texture and flavours! She’s definitely the macaron master! hehe STUNNING!

As if 2 macarons weren’t enough work, she also made some matcha cream puffs which I was addicted to! Couldn’t stop at one!

When I saw these, I had to remain calm and composed haha matcha kitkat by Agnes!! OMG. They were so so good!!! It’s so difficult to get hold of the commercial packed ones, I was lucky enough to try one cause Daisy gave me some and totally addicted to them! I sneaked some home too! hehe

Talking about Daisy, the sweet queen made two matcha cakes! These are matcha madeleines and she also made matcha brownies that were so gooey in the middle and an intense matcha flavour! SO SO YUM!

This was a hot favourite of the day, made by the ever so talented Ms Ihua, and you can see why. How pretty is this gateau??? Every layer just went perfectly with each other and the base was my favourite! Matcha-pistachio feuilletine white chocolate base, how can anyone not like that? Gorgeous!

This is what I call edible art! The artistic Zeboy’s interpretation of a fruit salad is just amazing! Sous vide and bruleed pineapple, watermelon, smoked cream with matcha and sour plum powder! He plated it on the spot and every one just went ooh-and-aah! These two lovebirds are seriously the dynamic duo! Super talented!

I too made two matcha cakes, this is the matcha swirl pound cake which was really buttery! I actually made this as a back-up in case my matcha swiss roll didn’t work out well. hehe But I decided to bring it to the party as well, or else I would be gobbling it all up on my own and that wouldn’t be very good for my waist line! haha Share the calories I say, sharing is caring right? hehe

And here’s presenting my first ever swiss roll! hehe Matcha swiss roll with azuki beans cream! I have to say, I was super worried with how this would turn out cause you won’t know till you unwrap it the day after and slice it to see the inside! Although the cream wasn’t evenly spread, but I let out a sigh of relieve after I sliced it and it stayed in shape!

I have to admit though, I totally wrecked my first try, so I had to make it again and thankfully they turned out alright! (: So don’t ever give up ; always try and try again! It is definitely worth it! hehe

Matcha Swiss Roll with Azuki Cream (adapted from Cooking With Dog)

Ingredients :

4 Egg Whites
40g Sugar
4 Egg Yolks
40g Sugar
40g Cake Flour
1 tbsp Matcha powder
120ml Whipping Cream
120g Azuki Bean Paste with whole beans
Powdered Sugar, for garnish

Steps :

1) Preheat the oven to 170 degrees celcius. Cover a baking tray with baking paper and set aside.

2) Mix the cake flour and matcha powder together and sift it three times. Do not skip this step as this will ensure no air pockets, clumps and keep the cake light.

3) In a clean and dry bowl, beat the egg whites until bubbles form. Slowly add half of the sugar and beat it. Add the rest of the sugar and beat until stiff peaks form.

4) In a separate bowl, beat the egg yolks with the sugar until thick and creamy. Then add the sifted flour into the bowl. Using a balloon whisk, mix until the flour is completely moistened. Add 1/3 of the meringue into the bowl and beat the mixture with the whisk and drop it into the bowl. When combined, add the rest of the meringue in two steps. Mix the mixture carefully, not to break the foam. The batter will get glossy and smooth. Be patient!

5) Pour the batter into the prepared baking tray and using a spatula, spread the batter evenly throughout the tray and to all four corners. Bake the cake in the oven for 18 -20 mins, turning the cake after the 10 mins mark so that it is baked evenly.

6) Take the cake out of the oven and drop it a few times to reduce the shrinkage. Remove the cake for the baking tray and place it on a flat surface. Cover it with another baking tray to make sure it doesn’t dry out. Allow it to cool completely before filling it with the azuki bean cream.

7) To make the azuki bean cream : Whip the cream till stiff peaks and add the azuki cream paste. Mix it evenly to make azuki bean cream.

8) Release the edges of the baking paper of the cake. Cover the cake with another sheet of baking paper, and flip it over. Slowy and gently remove the baking paper from the bottom of the cake. Place the paper on the bottom again and flip it back, in the upright position. Using a serrated knife, cute of the short edge furthest away from you with a diagonal cut.

9) Place the azuki cream onto the cake and using a spatula spread it out evenly, having a slightly thicker amount on the side closer to you. Fold the edge of the cake, pushing the paper forward, rolling the cake. Once rolled, wrap the cake with the clean sheet of baking paper, making sure it’s tightly wrapped. Cover with a plastic wrap and allow it to cool in the fridge.

10) To serve, unwrap the cake and place it on a long plate. Sift some icing sugar on top of the cake and slice it to the thickness of your liking. ENJOY!

Good afternoon my dear readers! Happy weekend! (: Hope it’s going well and you have lots of fun and yummy things planned ahead of you! Since it’s the start of Spring, I thought it would be a good time to make some new goals!

Being bold is about making each day count (be it today, weekly or even for the year), so why not step out of your comfort zone and express your boldness to the world right? hehe The first BOLD thing I’ve decided to do is trying my hardest to make a change in my life – Being healthier and fitter ! My goal couldn’t come in a better time, as Hudsons Coffee also decided to BE BOLD with their launch of a new Barista’s  Choice Blend – A rich and intense flavour with caramel undertones. YUM!

I was lucky to receive a a pre-ground take home bag of the new blend and I couldn’t wait to try it! Ever since my brunch at Three Bags Full, I have started a liking to french press coffee! This one wasn’t overly strong on the palette and not too sharp or acidic either! Smooth and a subtle taste of caramel, which the mr loved!

While enjoying my glass of coffee, I had a eureka moment! I really wanted to use it to bake! One particular ingredient came to mind – Banana! So I decided to combine the banana cake with some espresso, and to add some texture to the cake by adding a pecan streusel on top! I have made lots of banana cakes in the past, but never one with a coffee kick! This is me BEING BOLD (number 2) cause I don’t usually bake coffee cakes! So was really excited about this.

While making the streusel, I couldn’t stop sneaking teaspoons of it, cause it was so addictive! The combination of pecan and oats were just delish! hehe It could easily be turned into a mixture for granola too!

Although I am trying to get healthier and fitter, I still deserve the occasional treats yes? hehe So I added some dark chocolate chips in the cake to make it more indulgent! Anyway, dark chocolate is suppose to be good for you. I’m pretty sure there’s some scientific findings to back me up on this. haha

This cake was moist, full of flavour, and I just love having the bursts of chocolate and the crunch of the streusel top! Definitely one cake I would bake over and over again! You don’t need a very big piece to enjoy it, as it is quite rich. A small piece with a cup of tea or coffee is perfect!

Banana Espresso Pecan Streusel Cake (A Food Made With Love Original Recipe)

For the streusel :

1/2 cup + 2 tbs plain flour

1/2 cup rolled oats

1/2 cup brown sugar

1 tsp salt

85g unsalted butter

3/4 pecans, roughly chopped

Steps :

1) Mix the flour, rolled oats, brown sugar and salt in a medium bowl.

2) Add the butter and rub with your finger tips intul the mixture holds together (my favourite thing to do actually, find it very therapeutic! haha).

3) Add the chopped pecans, mix and set aside in the fridge.

For the cake :

200g unsalted butter

170g castor sugar

4 eggs

1 tsp vanilla bean paste

4 tbs milk

5-6 tbs espresso (I used the Barista’s Choice Blend from Hudsons Coffee)

2 cups + 3 tbs plain flour

1 tsp bicarbonate soda

1 tsp baking powder

3-4 bananas, mashed

3/4 – 1 cup dark chocolate chips

Steps :

1) Preheat oven to 160 degrees C. Prepare a 26cm by 26cm square tin by lining the bottom and greasing the sides. Set aside.

2) In a mixing bowl, cream the butter and sugar until light and fluffy.

3) Add the eggs, one at a time, and mix until well combined. Add the vanilla bean paste and the mashed bananas. Mix till it is evenly mixed.

4) Mix the espresso and milk in a measuring cup and add it alternately with the plain flour (dry-wet-dry-wet-dry sequence). Careful not to over mix.

5) Pour the mixture into the prepared tin and tap it a few times on the bench to make the top even. Sprinkle the streusel and bake for 1 hour or until the top is golden and the toothpick comes out clean. Cover the cake with foil after 30 mins if it browns too quickly.

6) All it to cool in the tin for 10 minutes and remove it from the tin to rest it on the cooling rack.

Enjoy! (: It was my very first cake I was confident enough to bring to work and share with my colleagues, and they loved it! (: I brought it in during recess and it was gone by lunch! The feedback was that the cake was really moist and they really liked the surprise of the chocolate chips! Yippee!

MILO. Just the thought of it brings me back to my childhood. Milo was something I grew up drinking. A cup everyday and even when I was older, I would still love drinking it. And yes, eating it by spoonfuls too! Don’t be shocked! I’m sure lots of you do it! heh I remember when we had to do the yearly cross country run (more walk than run to be honest haha), the one thing that we all look forward to was the milo van at the finishing line!

These days, what I would sometimes crave for when I’m back home in the heat is some ice milo or even milo dinosaur, which is pretty much ice milo with a whole heap of milo powder on top. Can you say YUM?!! Can’t get enough!

So when I came across this recipe of a milo cake on Pencil Kitchen, I couldn’t wait to start baking to taste it! I have to admit though, I probably overbaked mine cause it didn’t come out as gooey and light like hers, but after warming it up before eating it, it was still pretty delicious! Definitely tasted like having a warm cup of milo! So definitely gonna make this again, but cutting down my baking time!

Milo Brownie Pound Cake ( Recipe closely adapted from Pencil Kitchen )

175g butter, room temperature

150g caster sugar

3 eggs

1 tsp vanilla bean paste

200 ml milk

200g milo powder, extra 50g for dusting

a pinch coffee granules

40g cocoa powder

200g all purpose flour

1 tsp baking powder

2 pinch salt

1 tbs salted butter, melted

Steps : 

1) Preheat oven to 175 degrees celcius.  Prepare a 9×9 inch springform baking tin by lining the bottom with grease proof paper and lightly coating the interior with olive oil.

2) Dissolve 100g of milo powder and coffee granules in milk. Heat it a little to allow it to dissolve quicker. Set it aside and allow it to cool completely.

3) In a large bowl, sift the flour, 100g of milo powder, cocoa powder, baking powder and salt. Set aside.

4) In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, and beat till just combined. Stir in the vanilla bean paste.

5) Add the flour mixture and milo milk alternately, starting with the flour mixture.

Before going into the oven

6) Pour the mixture into the prepared baking tin and spread it out to make sure it’s evenly spread. Bake the cake for 30-40 mins (nothing more as it will overcook!) and allow it to cool in the tin for 10 mins.

7) Carefully release the spring and invert the cake onto a cooling rack. Brush the top with the melted salted butter and dust with 50g of milo powder.

Slice and enjoy it as it is, or zap it in the microwave to have it warm with a scoop of your favourite ice cream! (:

Purple Carrot Cake & Sweet High Tea

Good Sunday afternoon dear readers! I hope you’ve had a great weekend so far! (: I’m about to head to the airport to embark on my adventure to Europe! But before I do, I wanted to share a Sweet High Tea organised by Miss D, at her place, a few weeks ago! We each had to bring a thing or two to share. Oh boy were there heaps of delicious yummies, bother sweet and savoury!

Here’s a quick glimpse of the spread we had!

First up : Daisy’s Country Women’s scones and Julie’s Momofuku Milk Bar bagel bombs! Before I go into details, how cute is the bag? It keeps the yummies warm too! So need to get one. hehe Anyway, back to the food! The scones were freshly baked and so so good with cream and homemade strawberry and fig jam! hehe Julie’s bagel bombs were TO DIE FOR. Omgness. Biting into the bagel bomb was just heavenly. It’s filled with cream cheese, bacon (YES BACON) and spring onion.

Smoked salmon sandwiches

Next up : Smoked salmon sandwiches with cream cheese and capers. These were made by Ling and the smoked salmon were so so good and fresh! She also made some caramel slice! A good match of savoury and sweet! hehe

Broccoli and cheese muffins

Last of the savoury : My broccoli and cheese muffins! I haven’t made this for ages and I’m so glad there was an occasion to make them! Mums who want their children to have veggies should make these! Cheesy goodness and you can barely taste the broccoli! hehe So glad the girls liked them too! hehe

Then came the sweets! hehe My eyes were fixated on these the moment it came through the door! Liz made my two favourite kuehs : kueh dadar and kueh sarlat! Kueh dadar is a thin pandan crepe that is filled with a mixture of gula meleka and coconut! If I haven’t already said this, I am OBSESSED with gula melaka! haha Love it more than normal sugar. hehe If I could flavour everything with it, I would! Kueh sarlat consists of two layers : the bottom is glutinous rice, and the top is a thick pandan custard! It was perfect! I wanted to steal the whole plate back! hehe

In true Sweet Queen fashion, Daisy made something sweet of course! hehe Peanut butter cupcakes with a surprise mini Reese’s peanut butter cup at the bottom! hehe Nothing could be better than the combination of chocolate and peanut butter. It was delish! hehe

Guinness ginger bread

Michele came with two beautiful sweets : a guinness ginger bread that’s so so moist and soft! hehe The ginger taste was subtle and just went perfectly with a cuppa tea! hehe

Eton Mess Cake

She also made a pretty eton mess cake! hehe It’s topped with strawberries and merigue nests and of course, we had it with a dollop (or two) of double cream. Mmmmmm (: That’s the sound we were all making when we had it. haha

Last but not least, it’s my humble purple carrot cake! hehe I love love love carrot cake but I probably haven’t made one in almost close to 5 years now. haha I have to say I’m really brave by baking cakes that I’ve not done in a while. I was soooo relieved when it was moist and crumbly. Instead of the usual orange carrots, I decided to give it a small twist by using purple carrots! hehe The colour turned out purplish blue! To top it, I decided to use the Hummingbird Bakery’s cream cheese icing. It’s one of the best ones I’ve had! Creamy and not too heavy. hehe I have to say I was really happy with it! 🙂

So I just want to share the recipe with you! Do give it a try if you love carrot cake like I do! (I know it seems I love everything, but I really do. haha)

Purple carrot cake

Purple Carrot Cake (adapted from The Cake Mistress)

2-3 large purple carrots, finely grated

I cup packed brown sugar

1 cup olive oil

3 large eggs

pinch of salt

1/2 tsp bicarb soda

2 cups self-raising flour

1/2 cup chopped walnuts, extra to garnish

1/2 cup raisins

1 tsp ground cinnamon

1 tsp ground nutmeg

Cream Cheese Frosting (From the Hummingbird Bakery Cookbook)

300g icing sugar

125g cream cheese

50g unsalted butter, soften

finely grated purple carrot

Steps : 

1) Preheat oven to 180 degrees celcius.

2) Beat brown sugar and olive oil until it gets to a thicker consistency. Add the eggs, one at a time, and beat until well combined.

3) Add salt, bicarb soda, carrots, flour, walnuts, raisins and spices. Mix it on slow speed until everything is well combined.

4) Put batter into a well greased baking tray (I used a 12-square loaf tin) and bake for 15-20 minutes, or until its lightly golden and the toothpick comes out clean after inserting it into the middle.

5) For the frosting : Beat the icing sugar and butter in a mixing bowl until well combined. Add the cream cheese in one go and beat until completely incorporated. Turn the mixer up to medium high, and beat until it’s light and fluffy (about 5 minutes). Do not over beat as it will turn runny. Pipe onto the cakes (when they are cooled) and top with a small piece of walnut.

Weekend Baking : Chocolate Olive Oil Cake with Fresh Raspberries

It’s been a while since I’ve baked something and I was really craving for some olive oil cake. Since it’s the weekend, and it’s been pouring, I decided to stay in and bake! (: Which was a perfect idea, if I can’t say so myself. hehe I was searching around for a recipe, and thankfully, Miss D  shared with me Nigella Lawson’s chocolate olive oil cake. The best of my two worlds : olive oil & chocolate. Who wouldn’t like chocolate yes? Plus, it is actually good for you!

I was a little worried about making it as I haven’t really made any cake with completely no flour. But it came out beautifully and was rich but surprisingly not too dense! It was still crumbly and actually pretty light. Was a hit with the mr from the first bite! (I sounded like I was rhyming there haha) Love the intensely deep colour of the cake in contrast with the white icing sugar. For some reason, icing sugar reminds me of snow. And it’s really magical, it makes every cake prettier! (:

Chocolate olive oil cake sliced and topped with freshly whipped vanilla bean cream

The original recipe of the cake is really quite healthy; no flour, no butter and not quite as much sugar as well. Just olive oil which is good for you and the chocolate component only consist of cocoa powder and water! How good is that? To make it a little healthier, I added fresh raspberries which added a little zing to the cake! And not to mention how pretty it looks with the specks on red when cut! (: Plus it’s gluten free! Wheeee!

Do note though that if you do put fresh raspberries in, you might have to finish it in a day or two if you leave it out. Probably can only be kept for up to a week in the fridge. But it probably won’t last longer than that anyways! hehe

Chocolate Olive Oil Cake with Fresh Raspberries (adapted from Nigella Lawson)

150 ml regular olive oil (plus more for greasing)

50 grams cocoa powder (good quality, sifted)

125 ml boiling water

1 tsp vanilla bean paste

150 grams ground almond

½ tsp bicarbonate of soda

170 grams caster sugar

3 eggs, room temperature

1 small punnet of fresh raspberries

freshly whipped vanilla bean cream, to garnish (or ice cream)

Steps :

1. Preheat your oven to 170°C/gas mark 3. Grease your springform tin with a little oil and line the base with baking parchment. Measure and sift the cocoa powder into a bowl or jug and whisk in the boiling water until you have a smooth, chocolatey, still runny (but only just) paste. Whisk in the vanilla extract, then set aside to cool a little.

2. In another smallish bowl, combine the ground almonds with the bicarbonate of soda and pinch of salt.

3. Put the sugar, olive oil and eggs into the bowl of a freestanding mixer with the paddle attachment and beat together vigorously for about 3 minutes until you have a pale-primrose, aerated and thickened cream. Turn the speed down a little and pour in the cocoa mixture, beating as you go, and when all is scraped in you can slowly tip in the ground almond mixture.

4. Scrape down, and stir a little with a spatula,and add the fresh raspberries. Give it a gentle stir until the raspberries are well mixed in. Pour this dark, liquid batter into the prepared tin. Bake for 40-45 minutes or until the sides are set and the very centre, on top, still looks slightly damp. A cake tester should come up mainly clean but with a few sticky chocolate crumbs clinging to it.

5. Let it cool for 10 minutes on a wire rack, still in its tin, and then ease the sides of the cake with a small metal spatula and spring it out of the tin. Leave to cool completely or eat while still warm with some freshly whipped vanilla bean cream or some ice cream.

A Season of Giving

Sour cream, pear & raspberry cake

Time really flies! It’s December already and this month only means one thing – Christmas is near! Christmas is no doubt my favourite festive season (and Chinese New Year of course) and I’m already counting down to the 25th! As school has ended for me a couple of days back, I decided to make something for some of my colleagues as a thank you + christmas gift. Nothing is more meaningful than a homemade present yes? hehe

As I was searching through what I wanted to make, I thought of making the ricotta pound cake I made a couple of weeks ago, and just add mixed berries into the batter to make it look a bit more festive. But I’ve ben hearing lots about the Bourke Street Bakery sour cream pear cake from the food blogger community who were lucky enough to try some that was made by Mich, The Bakeanista, at the blogger’s picnic recently. Miss D also made it recently and said that I should definitely give it a go cause it was really delicious! With so many raving reviews, I couldn’t not give it a try (: So glad I did though, cause it was so good! Super moist and Mich suggested adding fresh raspberries, which I did, and it made the cake look really pretty! So thank you! (:

Cut rounds out of the cake

And instead of slicing it up into the normal wedge, I decided to use a scone cutter to cut them into rounds instead before placing them into the plastic wrappers. Although I made a mess, it was all worth it, and might I add, fun! haha

And what did I do with the left over pieces and crumbs? What I love to do : put them into jars and layer them with freshly whipped vanilla bean cream and added more fresh raspberries! A combination I could easily (and happily) have every night if my waistline permits me to. 😛 Oh well! hehe Thank you again Mich for sharing the recipe! All my colleagues enjoyed the cake very much! YAY!

BSB Sour Cream Pear & Raspberry Cake (Adapted from The Bakeanista)

250g unsalted butter

250g caster sugar

1 tsp vanilla bean paste

4 eggs, room temperature

200g sour cream

300g self-raising flour, sifted

1 3/4 pears (about 400g, tinned), sliced into quarters

18-20 fresh raspberries

Steps :

1) Preheat oven to 180 degrees celcius. Line baking paper at the base of a 28cm baking tin, and spray the sides with olive oil evenly.

2) In a mixer, cream the butter and caster sugar till light and fluffy. Add the vanilla bean paste and mix till well combined.

3) Add the eggs, one at a time, making sure they are well incorporated before each addition.

4) Alternate the flour and sour cream and mix it on low speed till well combined. Use a spatula to scoop the batter into the tin, and spread it out until the top is smooth. Arrange the pear quarters evenly around the tin, and place the raspberries in the spaces between them.

5) Bake for 40 mins, then cover the baking tin with foil and continue baking for another 20-30 minutes, or until a skewer comes out clean when inserted into the middle of the cake.

6) Remove from the oven and allow it to cool in the baking tin for 10 minutes before turning out onto a cooling rack. If you intend to cut rounds out of the cake, do make sure the cake is completely cooled before doing so, or it would crumble! Sprinkle icing sugar on top before serving! Enjoy!

Ricotta Pound Cake

Have you ever craved for something and you just had to get down and messy in the kitchen and make it? This was exactly what happened to me this weekend! I have been craving for some pound cake for the longest time and even though I could easily buy one from Woolies or Coles, there is nothing more satisfying than making something from scratch and indulging after! When I was a kid, mum use to get those Sara Lee pound cakes from the chilled section of the supermarket as a treat for us in the weekend! That was exactly what I was craving for last week.

Traditionally, pound cakes are made with a pound of each ingredient : eggs, flour, butter and sugar. But of late, people adjust according to their preference and come up with some really yummy (and slightly healthier) versions. One recipe which I was drawn to was one that used ricotta in replace of some of the butter content.  Perfect with a dollop of freshly whipped vanilla bean cream, some fresh fruit (mangos are perfect especially cause they are in season) and a hot cuppa for afternoon tea! (: My cravings were satisfied with my first bite! I love love love how the cake looks really dense but is actually not that heavy.

You never really know how the cake has turned out till you cut a slice out and see the inside of it. I was pleasantly surprised with how fine-textured the cake was. The crumbs were really fine and as Ju from Little Teochew calls it – microcrumbs! hehe I remember  reading one of the post from Ju (and she is AMAZING!) on her honey castella cake and was in awe! They look so perfect, fluffy and I just wanted to sink my teeth into them! She generously shared her tips of having microcrumbs in cakes – beating your eggs on low speed for a longer period of time, as compared to high speed. I tried it this time, and it worked! WOOO! (: Couldn’t be happier!

The recipe uses cake flour instead of plain flour and for some reason I couldn’t find cake flour in the local supermarkets. But Joy the Baker has a simple way of making your own cake flour! And trust me, it’s worth the extra steps! I think it makes the cake less dense as well, so do give it a shot if you can’t get any.

Steps to Making Cake Flour (from Joy the Baker, makes 2 1/2 cups)

 1. Measure out 2 1/2 cups of plain flour into a bowl.

2. Scoop out 5 tbs of the plain flour and place it back into the flour container.

3. Add 5 tbs of corn flour to the rest of the plain flour and sift the mixture 3 times.

{ The rule of the thumb is, for every cup of flour, you replace 2 tbs of flour with corn flour. }

Ricotta Pound Cake (adapted from Cakeb00k)

2 1/4 cups of cake flour (recipe above)

1 tbs + 3/4 tsp baking powder

1 1/2 tsp salt

250g unsalted butter, room temperature

500g ricotta (you could use light ricotta)

1 3/4 cup caster sugar

5 large eggs

1 tsp vanilla bean paste

Icing sugar and lemon zest (to garnish, optional)

Steps :

1) Spray a bundt cake pan with olive oil making sure it is well coated and set it aside. Preheat the oven to 180 degrees celcius.

2) In a large bowl, sift the cake flour, salt and baking powder.

3) Using a mixer, cream the butter and sugar until light and fluffy. Add the ricotta and mix on medium speed until well incorporated and the mixture is smooth.

4) Turn the speed down to low and add the eggs one at the time. Make sure to scrap the sides and bottom of the bowl a few times. Once the eggs are well combined, add the vanilla bean paste.

5) Add the dry ingredients 1/4 cup at a time and mix until the mixture is just combined. Make sure this is done on a low speed as well.

6) Place the mixture into the bundt pan and smoothen the top out using a spatula. Tap it gently on the work surface to release any air bubbles.

7) Bake the cake for 15 minutes, before turning the oven down to 160 degrees celcius and continue cooking for a further 40 minutes. It is done with the sides are starting to come away from the pan; the cake springs back when pressed and the skewer inserted comes out clean. Cool in the pan for 10 minutes before transferring it onto a cooling rack.

8) Sprinkle some icing sugar and grate some lemon zest over it for additional flavour! To serve, make sure the cake has completely cooled, then top with freshly whipped vanilla bean cream and fresh fruits!

Jelly Hearts

Ever since I started being more active in the blogging world, I’ve been really blessed with meeting new friends! Recently, I was invited to attend Peach-water’s birthday dinner but cause I was down with really bad hayfever, I told her that we’ll rearrange dinner and I would make her something special. (: I couldn’t think of anything better but some strawberry jelly hearts!

If you feel that these pretty cakes look familiar, I did make them ages ago and did a post on it. But I went back to look at it and the photos were so small! So here I am, re-doing the post and sharing the recipe again. It’s really interesting to see the difference a few years on! (:

I have to say, these are not difficult to make, just time consuming as you have to make sure each layer is set properly before starting on the next! The most important layer is the jelly layer, as you have to allow the jelly mixture to cool before pouring onto the cream cheese layer, to get a clear jelly layer! (: Patience, is the key when making this!

I used to only use vanilla essence when making the cream cheese filling, but I decided to use vanilla bean paste this time round. There is just something magical when you see the little black dots! And the flavour it gives the cream cheese is not comparable to just using the essence. If you do have vanilla beans, please give it a try!

These little rectangular cheesecakes with a heart in the middle make beautiful gifts for your loved ones and your friends. So the next time you are thinking of what to get for them, why not give these a try? Nothing can compared to things made with love!

Jelly Hearts 

Base : 

320g digestive biscuits

160g melted unsalted butter

Cheese Filling :

250g cream cheese

2 1/4 tsp gelatine powder

70g caster sugar

150ml hot water

1 tsp vanilla bean paste

8 medium sized strawberries

Jelly Topping : 

2 packets of strawberry flavoured jello (170g)

1 1/2 cups hot water

1 1/2 cups room temp water

Steps :

1) For the base : Place the biscuits in a ziplock bag, and crush them till they are fine, making sure there are no big chunks. Pour them into a large bowl, and mix in the melted butter.

2) Pour them into the base of a 9×9 square baking tray. Press onto the base and make sure it’s really compressed and make it as flat as you can. Prick the base with a fork and chill for at least 15 minutes.

3) For the cheese filling : Cut the strawberries into half. Using a small heart shape cutter, cut hearts out of the strawberry halves and place them on a plate lined with paper towel.

4) Place gelatine and sugar in a bowl. Pour the boiling water over and stir until the gelatine has dissolved.

5) In a mixing bowl, cream the cream cheese and vanilla bean paste together and slowly add the gelatine syrup gradually until smooth. Pour it over  the base. Place it in the fridge for 10 minutes then place the strawberry hearts, partially submerged in the cheese filling. Place it back into the fridge and refrigerate for 2 hours.

6) For the jelly topping : Dissolve the jello in hot water and stir well. Add the room temperature water and allow it to cool completely before pouring over the cheese filling. (Use a ladle and slowly pour the mixture over the strawberries instead of the cheese to keep the jello clear!)

7) Chill it in the fridge for another 2 hours or overnight for the best results.

*Note : When slicing, make sure you clean the knife after every cut. It might seem difficult to get them out without it being messy, but start with the corner and use a spetula to help you. Once you have the first piece out, the rest would be a breeze!

Salted Caramel Chocolate Lava Cake

So it was my mr’s birthday yesterday and I really wanted to make him a cake especially since it’s his birthday I’m celebrating with him as his wife! (: So I have been thinking and thinking what would he like as his cake. As he loves salted caramel, I was inspired by Ms D’s cake  (the queen of desserts hehe) that she made for her mr’s birthday! So after much research, I found a perfect cake that the mr would love!

I was really nervous with how it would turn out cause I havent baked a lava cake for the longest time. And I was quite stressed when making it cause there was no turning back. I had no back up cake plan at all. haha You could definitely see the relief in my face when the cake came out cleanly from the ramekins and I found out there was a gooey molten middle! SUCCESS!

And it was definitely a hit with the mr! He has requested that I make him this cake every year on his birthday! hehe I have to say, nothing is sexier than having the luscious salted caramel oozing out of the cake the moment you cut your fork through! It just puts a really big smile on my face! And I could just see how happy and satisfied the mr was. To me, that was the most important part of the day – that he enjoyed what I made him. hehe

Salted Caramel Chocolate Lava Cake (adapted from The Endless Meal)

For the chocolate salted caramel : 

142 g dark chocolate

1 cup caster sugar

28 g unsalted butter

1 tsp fleur de sel, plus a bit more when layering dessert

2 tbs water

1/2 cup thickened cream

For the lava cake :

284g dark chocolate

113 g unsalted butter

3 large eggs

3 egg yolks

1/2 cup plain flour

1/2 cup icing sugar, and more for dusting

2 tbs cocoa powder

extra butter and cocoa powder for ramekins

Steps :

1) For chocolate salted caramel : Melt chocolate in a double boiler, over a small pot of boiling water.

2) In a large pot, add the sugar and water and heat over medium heat until sugar melts and turn dark amber. If you have a candy thermometer, it should reach 176 degrees celcius. Take it off the heat, and carefully add the thicken cream. (Do note that it will bubble vigorously, so do not stand too close.) Whisk the mixture until smooth, then add the melted chocolate. Once it’s mixed well, stir in the butter. Set aside.

3) For the cake : Prepare 6-8 ramekins (depending on the size), and butter them well before coating them with cocoa powder, turning them upside down to make sure there is no excess. Set aside.

4) Melt butter and chocolate in a heat proof bowl, over a mall pot of boiling water. Once melted, set aside allowing it to cool a little.

5) In a mixer, whisk the eggs and egg yolks until well combined. Add the cooled melted chocolate and butter mixture, and stir well. Combine the flour and icing sugar, making sure there are no lumps, then slowly add to the mixture. Mix until smooth.

6) Fill each ramekin half way. Then place a big teaspoon of chocolate salted caramel in the middle and sprinkle a little bit more fleur de sel, before covering with more cake batter until it’s 3/4 filled. (At this stage, you can either bake it straight away or keep it in the fridge for up to 3 days.)

7) Preheat oven to 210 degrees celcius for 10 minutes. Place the ramekins in the middle rack of the oven, and bake for 15-20 minutes. If your ramekins are smaller, please reduce the baking time to ensure the gooey middle! Remove the ramekin from the oven, and run a palette knife through the sides to loosen the cake.

8) Carefully place a plate over the top of the ramekin and invert it. Carefully lift the ramekin up. Dust with icing sugar and serve with whipped vanilla bean cream if desired.
