Shrooms Delish

Happy Mid Week dearest readers! (: I hope your week has been going well and we’re not too far from the weekend (and a long one for those in Melbourne & Tassy! Woohoo!) I’ve got some exciting news to share with all of you! I was recently contacted by Keep Left and was asked to be part of this fun recipe campaign with Bakers Delight! Without much hesitation, I agreed to it! Fortunately the time line wasn’t too rush, so I had the weekend to try out what I wanted to create.

Ingredients

We were allowed to create a recipe for lunch with our choice of any Bakers Delight bread and I decided to head to their website to see what they had to offer and the choices were endless! There were SO MANY different kinds of bread and I haven’t really said this before, but my weakness is definitely freshly baked bread! Mmmmm (:

After much consideration, I decided to go with the pipe loaf! It totally got my attention cause it was my first time seeing a loaf in a shape of a cylinder! How cute is that??? I tried to think of what I could do with it, but couldn’t really visualise until the bread loaves were delivered! The moment I saw it, I knew exactly what I wanted to make!

Many of you would know that brunch is no doubt my favourite meal of all time so of course, I decided to make something that could be enjoyed for both brunch or lunch. I walked along the aisles of the supermarket (and thankfully I was given a $20 Coles voucher to get ingredients! hehe) and I decided on something a little different from my usual choices, I decided to go meatless! Don’t get me wrong, I still love my smoked salmon and crispy bacon, but I decided to try something a little different, plus I was craving for some mushrooms!

Instead of just the usual white button mushrooms, I decided to buy a whole variety of them! I didn’t stop at just shiitake mushrooms, I wanted to have some asian influence in the dish as well. It’s amazing how many varieties there are in the mushroom area at all the supermarkets now, and even the asian ones! I couldn’t be happier! (:

To add a little freshness to the dish, I decided to top with some avocado salsa as well!

To top it all off, I added a fried egg (with a runny yolk) and some crispy enoki mushrooms for some crunch! I am one who loves dishes with different textures, so the crunchy enokis were a must! hehe And of course, all these sat on a nice thick slice of the wholemeal pipe loaf which was so soft in the middle, and had a good crust after being toasted for 5 minutes in the oven! Of course, you could easily do this on any other thick toast, but I thought the round dimensions made the presentation a little prettier. hehe and yes, the plate from Made In Japan helps too! I’m really lucky that the Mr bought me some during the recent sale.

So here’s my recipe for my creation : Shrooms Delish ! Hope you all will enjoy it as much as the family did! (:

Shrooms Delish (a Food Made With Love original creation, serves 4)

For the mushroom ragout :

6 fresh shiitake mushrooms, thinly sliced

150g pearl mushrooms

8 white button mushrooms, quartered

1/2 leek, halved lengthwise and thinly sliced

2 cloves of garlic, chopped

50g butter

2 tbs water

5 sprigs of fresh chives, finely chopped

2 tbs creme fraiche

salt & pepper, for seasoning

For the crispy enoki mushrooms :

100g enoki mushrooms

vegetable oil, for deep frying

For the avocado salsa :

1 ripe avocado, roughly chopped or mash

1/4 red onion

4 pieces of sundried tomatoes, finely chopped

1 tbs olive oil

4 eggs, fried sunny side up

Pipe loaf, sliced into 1-inch slices

1 clove of garlic, peeled and left whole

Truffle oil, for garnish (optional)

Steps :

1) For the mushroom ragout : In a heavy-based pan, melt half of the butter over medium heat. Add the garlic and leeks, and allow them to sweat and soften, stirring continuously. Do be careful not to burn it, as it will turn bitter. Add the mushrooms and fry till they get soft and tender. Add the rest of the butter and water, allow the mixture to simmer for 10 minutes and until the flavours have developed, and the sauce has thickened. Season with salt and pepper, then turn the heat off. Add in the chives and creme friache and stir it till well combined. Set it a side while preparing the other components.

2) For the crispy enoki : In small pot, add the vegetable oil and heat it over medium-high heat. Add the enoki mushrooms (in batches) and fry till they are golden and crispy. Remove from the oil, and place them on some paper towel to absorb the excess oil.

3) For the avocado salsa : In a large bowl, add the avocado, chopped red onions and sundried tomatoes with the olive oil and give it a good stir. Season with salt and pepper and set a side.

4) For the toast : In a preheated oven, toast the bread for 5 minutes, or until the bread is nice and crispy on the outside with a little golden brown on top. When you take it out of the oven, rub the clove of garlic on the bread, so that you have an instant garlic bread base!

5) To plate : Place the thick toast on a plate, then add the mushroom ragout, followed by the avocado salsa. Slowly place the fried egg on top of the stack, and top it off with some crispy fried enoki mushrooms. I garnished with a sprig of chive and season with salt & pepper. Just to be a little more indulgent, I drizzled a bit of truffle oil on top, but it’s totally optional.

Brunch is no doubt my favourite meal of the day. But due to work, it’s only something we can do during the weekends. Which is one of the reasons why I always look forward to the weekends! (: But as the Mr works half days on Saturdays now, our brunch date is moved to Sundays now! So two Saturdays back, I met my dearest Peach Water for brunch at Duchess of Spotswood.

I have to admit, it wasn’t my first time dining at Duchess, but it’s been quite a while since (when I use to live in Kensington). In fact, it’s been more than a year! So I was definitely looking forward to having brunch and more so with a good friend! (:

As it’s been quite a while since I’ve met my dearest Peachie, we couldn’t stop chatting from the moment we both sat down! haha Thankfully, the staff at Duchess were really patient and gave us ample time to make our choices. We started off our brunch with a mini tea party and each ordered one we love. I had chai latte and she ordered English Breakfast tea. When the teapots and cups arrived at our table, there were “oo’s and ahh’s” for a good couple of minutes! The colours were just so eye-catching! Love love love the seafoam green and of course, which girl doesn’t like a little bit of tiffany blue? hehe (:

And how thoughtful is the barista? We had little pots of honey (for the chai) and milk (for the english breakfast) sitting in the cups when it was served! Absolutely perfect! (:

Duchess of Pork

One look at the menu and I instantly knew what I wanted : the Duchess of Pork! The flavours just explode in your mouth and the pork jawl is so crispy on the outside and just falls apart on the inside! I could easily polish off plates of this any day! Everything just went so well with the richness of the egg yolk and the truffle sauce. Mmmm.. just talking about it is making me salivate and wanting more! hehe Of course nothing was wasted and I used my sourdough toast to soak up every last drop on the plate.

King's Woodcock

Peach Water decided to go for the King’s Woodcock. I kinda knew she would pick that as when we spoke the days prior to our meet up, she told me she was craving for some sausages! hehe I tried a little of each component and thought it was not too bad. I could taste the fennel in the sausages but there wasn’t much of a kick from the chilli. But that might just be because we both love our spicy food! hehe Having said that, the presentation of this dish was really eye catching though! Love the purple micro herbs against the deep yellow eggs. Too pretty!

I definitely enjoyed every single part of my dish and having chai after 2 months of the lack of it was definitely a plus! (: Of course, it was yet another lovely catch up with my dearest Peach Water and definitely looking forward to our next brunch date! Bring It On : Pizza Fight At The Grosvenor Hotel

Don’t worry dear readers, this was not a physical fight! hehe It was more of a challenge. One that involves creating the best pizza and be crowned the champ! (: Thanks to the Grosvenor Hotel and Tink PR, some food bloggers and I had the chance to get flour all over our fingers and learn the art of making a good pizza dough. I was definitely looking forward to creating my very own pizza! To be honest, I didn’t realise how serious the competition was until everyone was tweeting about bringing their own secret ingredient! And when I went empty handed, only one thing was on my mind ” uh-oh, I’m in big trouble ” haha. It made me super duper nervous! In addition to that, it was my first time meeting most of the people invited for this challenge – Iron Chef Shellie, I Eat Therefore I Am, I’m So Hungree, Brunch Addict, Sweet Cherrie Pie & Ms D (Never Too Sweet For Me). But I have to say, I really didn’t need to be nervous, cause everyone was so friendly (with their game face on hehe) and we had so much fun from the start to the end! Definitely a night to remember! (:

When everyone arrived, we were brought to our table by the gorgeous Julia (From Tink PR) and introduced Chef Emile to us! In the midst of all the introductions, the table was filled with a spread of chicken liver parfait & hot bread, antipasto and some arancini balls.

The chicken liver parfait was my favourite! It was so smooth and just perfect when spread on the bread. YUMS!

The arancini balls were the perfect bite size, and had bits of chicken in them! After filling out tummies, we headed towards the kitchen to learn about making the dough.

We each had our own dough to work on, and boy was it a work out to just get the dough right! I was standing next to Thanh and we just couldn’t stop laughing as we went along! We were lucky enough to have Chef Emile and Stefano there to give us a hand and to make sure we are on the right track!

After what felt like hours, our dough was finally ready to be cling wrapped and proofed!

While our doughs were proofing, Stefano took out a whole tray of perfect looking doughs so that we could learn how to stretch them by hand! The right hand stretches while the left hand rotates the dough! Definitely easier said than done, but I had so much fun! It was like playing with playdough haha

It was even an art to place them on the wooden boards before putting the ingredients on!  And at this point, everyone had their game face on and were all ready for the challenge!

We all gathered around the table and Julia starts explaining how the challenge will be carried out. We were split into three groups so that the wood oven pizza won’t be over crowded. So off went the first group of savouries!

The first was Bakkwamon by Ashley of I’m So Hungree and it was inspired by her dad! Her secret ingredient was homemade bak kwa! Plus her pizza base was the gluten free one! hehe It was so delicious! I could just eat the bak kwa all night long! (:

Banhmigeddon by Shellie of Iron Chef Shellie

This was one of my favourites of the savouries for the night! It was Shellie’s (Iron Chef Shellie) banhmigeddon! The lemongrass chicken was SO GOOD! I was super tempted to go for seconds but had to control myself cause I had alot more to taste through the night hehe

The Karaage Kid by Thanh of I Eat Therefore I Am

Thanh (I Eat Therefore I Am) made the karaage kid – He brought in pieces of crispy karaage (fried chicken) and drizzled yummy roasted sesame sauce! That’s pure magic and was also one that I really enjoyed for the night! (:

Fiddle to the Fennel was created by Scott of Brunch Addict! How cute is the name? I’m not a but fan of fennel but this was so good and the sweetness of the caramelised onions just stood out with every bite! Noms!

Baa Baa's Delight by Sabrina of Brunch Addict

Sabrina of Brunch Addict made Baa Baa’s Delight and how pretty are the beets on the pizza? With the classic combination of lamb and minted yogurt, this was also really good! In fact everyone’s pizza were awesome creations and it was so difficult to rate them!

After all the savouries, of course up comes the sweets! Even though we were all quite full by then, there is always room for dessert yes? YES! Cause I decided to walk on the sweet side that evening, together with Miss D (of course!) and Cherrie! We were spoilt for choice for the ingredients and ended up using almost similar things with slight variations of each! So it was definitely a close fight!

Cherrie made hers with a dulce de leche base, mashed banans, almond flakes and her secret ingredient, bacon! The combination of sweet and savoury was just brilliant! Almost reminded me of the Elvis sandwich which I LOVE! hehe

Sweet Attack by Daisy of Never Too Sweet For Me

Our dearest queen of sweets, Daisy (Never Too Sweet For Me) of course created a dessert pizza for the night! hehe Her was called ‘Sweet Attack’ and it had dulce de leche as the base, with almond flakes, almond crumble, honeycomb and nutella! It was deliciously sweet! hehe Everyone loved it! Noms!

Banana Nut Cracker by Me!

Last but not least, it’s my creation : Banana nut cracker ! I was thinking about breakfast cereals for some reason, so I decided to do a breakfast inspired one with butterscotch sauce, bananas,  almond crumble, flaked almonds, walnuts and sprinkled with some cinnamon sugar. Of course, I’m biased and I did like mine! haha I think just cause it’s everything I love on a plate! Especially the subtle hit of cinnamon with every bite. Reminds me of cinnamon sugar churros! NOMS! hehe

Once everyone had scored their peers (including our own creations), Julia and Chef Emile went into another area to add up the scores and after 20 minutes, the winners were announced! There was a tie in the first place and it was none other than the Banhmigeddon (by Shellie) and Sweet Attack (by Daisy)! Congrats girls!! And to my surprise, I came in second! WHEEEEE! (: And our pizzas went on as their specials the following day and will be on their specials for the next week for everyone to try!

I’ve been very lucky this year and have come to know a few really good friends who are sure to be keepers. It’s really amazing how friendships can form through the love of food! Absolutely love it! (: My dearest Peach Water was so lovely to invite me to accompany her for brunch last weekend. She was invited by 360 Immerse Agency to visit the Bendigo St Milk Bar and she decided to bring me along! Whoopeedoo! hehe I’m one lucky duck! heh

I’ve never really visited any milk bars that have been converted into a cafe before. So I was really excited about this visit! When we entered the cafe, it didn’t look anything like a milk bar. Instead, it was really spacious and had two dining areas. One was just right opposite the beautiful glass cabinet of sandwiches and yummy display of cakes! The other is a small cosy room filled with smaller tables. Love the decors in the place, had colourful paintings and spruced with small pots of plants everywhere! Initially, we wanted to sit in the small enclosed area, but because the weather was bright and sunny that afternoon, we decided to head to their backyard instead!

When we sat down, we were immediately asked what we wanted to drink before browsing the menu.

I was really glad they served chai soy latte, so that’s what I ordered! Sadly, there wasn’t much of a chai taste to my latte, it almost just tasted like a cup of hot soy milk with a hint of chai. I have to say though, that thankfully, they didn’t use the syrup to make their chai! But would be good if they allowed the chai leaves to be brewed a little longer.

Peach Water’s hot chocolate was also quite a let down. When it first arrived, she had a taste and found that is was overly sweet. So she asked for them to add a little more milk into it. They were nice enough to make another cup freshly for her, but this time, it turned out too milky and wasn’t chocolatey at all. It was a pity, as both drinks looked really good when they were served to us!

Thankfully, the food was amazing! Just scheming through the menu, we both knew what we were going to order. But just before we did, we were chatting to the staff and asking her what she would recommend. As Peach Water loves her mushrooms, the staff told her she would not regret ordering it! And so she did! The field mushrooms were marinated in lemon, garlic and herbs and topped with rocket dressed with creamy goats cheese, poached eggs and served on top of toasted cibatta. Those mushrooms were SO GOOD. They looked so simple, but they were packed full of flavour! The ciabatta was really yummy and light! I would go back just to have it! Delish!

If you know me, I am addicted to corn fritters. So when I saw it on the menu, I just had to order it! The staff said that it was a hot item on the menu, score! (: The corn fritters were swerved with avocado salsa, rocket and poached eggs. Every bite I took, there were corn kernels popping in my mouth! My rocket was dressed differently from Peach Water’s. It was lightly dressed with a vinaigrette and had a little tang to it. Everything just went perfectly and boy do chefs at Bendigo St Milk Bar know how to poach their eggs. All our eggs were perfectly poached with a molten middle!

Of course, both of us had fun taking shots of the runny yolk! A pity I didn’t snap Peach Water‘s plate after she cut into hers. Do head over to her post to see! Hers looked like two pac men! haha Love it!

One more shot from the top! (: I couldn’t help it, sorry! hehe Love how orangey the yolk is. AMAZEBALLS! hehe The yolk was perfect as a sauce for my fritters! I usually can’t finish my meals, but I ate it all up, not a single drop of egg yolk was left on the plate hehe

We then moved inside to get some cool air, as it was getting really hot. Bendigo St Milk Bar also had a range of sweets to choose from after the savoury and that’s exactly what we did! But we were both really stuffed from our mains, so we decided to share a slice of lemon drizzle cake. Mmm, love citrus in my cakes!

The cake was really moist in the middle and became crumbly as we made our way through to the edge. It was a little too sweet for our palette but I love how it had a really strong lemon flavour to it. It would be perfect! The edge was a little darker, but I actually quite like the caramelised bits! hehe If I had more space in my tummy, I would order a cup of hot tea to have with this.

It was definitely a good experience at Bendigo St Milk Bar besides the drinks at the start. But we definitely enjoyed the food that we had and I would definitely head back for more mushrooms! Noms! Ricotta Pound Cake

Have you ever craved for something and you just had to get down and messy in the kitchen and make it? This was exactly what happened to me this weekend! I have been craving for some pound cake for the longest time and even though I could easily buy one from Woolies or Coles, there is nothing more satisfying than making something from scratch and indulging after! When I was a kid, mum use to get those Sara Lee pound cakes from the chilled section of the supermarket as a treat for us in the weekend! That was exactly what I was craving for last week.

Traditionally, pound cakes are made with a pound of each ingredient : eggs, flour, butter and sugar. But of late, people adjust according to their preference and come up with some really yummy (and slightly healthier) versions. One recipe which I was drawn to was one that used ricotta in replace of some of the butter content.  Perfect with a dollop of freshly whipped vanilla bean cream, some fresh fruit (mangos are perfect especially cause they are in season) and a hot cuppa for afternoon tea! (: My cravings were satisfied with my first bite! I love love love how the cake looks really dense but is actually not that heavy.

You never really know how the cake has turned out till you cut a slice out and see the inside of it. I was pleasantly surprised with how fine-textured the cake was. The crumbs were really fine and as Ju from Little Teochew calls it – microcrumbs! hehe I remember  reading one of the post from Ju (and she is AMAZING!) on her honey castella cake and was in awe! They look so perfect, fluffy and I just wanted to sink my teeth into them! She generously shared her tips of having microcrumbs in cakes – beating your eggs on low speed for a longer period of time, as compared to high speed. I tried it this time, and it worked! WOOO! (: Couldn’t be happier!

The recipe uses cake flour instead of plain flour and for some reason I couldn’t find cake flour in the local supermarkets. But Joy the Baker has a simple way of making your own cake flour! And trust me, it’s worth the extra steps! I think it makes the cake less dense as well, so do give it a shot if you can’t get any.

Steps to Making Cake Flour (from Joy the Baker, makes 2 1/2 cups)

 1. Measure out 2 1/2 cups of plain flour into a bowl.

2. Scoop out 5 tbs of the plain flour and place it back into the flour container.

3. Add 5 tbs of corn flour to the rest of the plain flour and sift the mixture 3 times.

{ The rule of the thumb is, for every cup of flour, you replace 2 tbs of flour with corn flour. }

Ricotta Pound Cake (adapted from Cakeb00k)

2 1/4 cups of cake flour (recipe above)

1 tbs + 3/4 tsp baking powder

1 1/2 tsp salt

250g unsalted butter, room temperature

500g ricotta (you could use light ricotta)

1 3/4 cup caster sugar

5 large eggs

1 tsp vanilla bean paste

Icing sugar and lemon zest (to garnish, optional)

Steps :

1) Spray a bundt cake pan with olive oil making sure it is well coated and set it aside. Preheat the oven to 180 degrees celcius.

2) In a large bowl, sift the cake flour, salt and baking powder.

3) Using a mixer, cream the butter and sugar until light and fluffy. Add the ricotta and mix on medium speed until well incorporated and the mixture is smooth.

4) Turn the speed down to low and add the eggs one at the time. Make sure to scrap the sides and bottom of the bowl a few times. Once the eggs are well combined, add the vanilla bean paste.

5) Add the dry ingredients 1/4 cup at a time and mix until the mixture is just combined. Make sure this is done on a low speed as well.

6) Place the mixture into the bundt pan and smoothen the top out using a spatula. Tap it gently on the work surface to release any air bubbles.

7) Bake the cake for 15 minutes, before turning the oven down to 160 degrees celcius and continue cooking for a further 40 minutes. It is done with the sides are starting to come away from the pan; the cake springs back when pressed and the skewer inserted comes out clean. Cool in the pan for 10 minutes before transferring it onto a cooling rack.

8) Sprinkle some icing sugar and grate some lemon zest over it for additional flavour! To serve, make sure the cake has completely cooled, then top with freshly whipped vanilla bean cream and fresh fruits!

Of Dumplings & Popcorn Chicken

Dumplings. I absolutely love them! I’m sure I am not alone about this. What’s not to love? Pan-fried, steamed, boiled and I could have them on their own, or with noodles or soup. You name it, I will love it. hehe That’s how much I love dumplings. So you can imagine how happy I was when I realise the newly opened Food Republik in Boxhill has dumplings of all kinds made on the spot and served piping hot.

Food Republik has a concept of a food court just that it has table service. If you’re from Singapore or Malaysia, I’m sure Food Republik (or Republic) rings a bell. For those who ain’t familiar, Food Republik in Singapore and Malaysia is a huge food court that offers a whole range of food so everyone could get something they enjoy. So even if you go with a whole group of friends, everyone could order their own meal and still have the company of their friends.

Food Republik in Boxhill is a slightly different concept : It’s a food court with a whole range of different Taiwanese food and dessert. To reduce the queue lines, instead of the usual food court concept, it has table service which is pretty handy! There’s 2 menus : one savoury and one sweet. I met up with a few of my foodie girls (Miss D, Miss J, Miss L) and beauty blogger (Miss L) after seeing numerous pictures of the xiao long baos that people have been having. I couldn’t wait to dive into those dumplings!

These delicious small steam dumplings are filled with delicious mince pork and flavoursome soup. You have to eat it with caution as if you put the whole thing in your mouth, you would burn yourself bad! I love to place the dumpling on the spoon, and slowly nip a portion of the thin skin, and suck the soup before adding some vinegar and then, only then, popping the whole thing in my mouth. MMMM. (: My ultimate favourite is from Ding Tai Fung, but unfortunately they don’t have it here in Melbourne. This is 90% similar to those! The closest I’ve ever had. SO HAPPY! I would easily gobble up 4 (which is the small portion).

We also ordered a plate of pan-fried pork dumplings and they were delicious! Look how crispy they are! It’s amazing! And the skin was thin, and the filling was juicy. We definitely were in dumpling heaven! haha

Miss D suggested we order the meatball soup and it was really good. Almost like a hot and sour soup, without the spiciness! It had dried  shiitake mushrooms, bamboo shoots and topped with coriander. So many different textures, just the kind of dish I really enjoy. Perfect for a cold night!

Another dish we were all craving for was the popcorn chicken! These were absolutely mouthwatering! Every piece was crispy and well seasoned, I ended up popping them into my mouth non-stop! hehe It reminded me alot of the XXXL chicken chop I had when I went to Taiwan, just that it’s bite sized. We did wanna order the chicken chop, but Miss J said the last time she ordered it, it wasn’t cut! So would be difficult to share. This was so much easier! Loved it! NOMS! A must order when you’re there! (:

The last savoury dish we ordered was ja jiang mien (noodles with mince meat sauce). The noodles were bouncy and chewy and were all coated with the mince meat sauce. Nothing really special, but it was quite yum! I only needed a small bowl to make me stuffed!

So it was time for something sweet, and the dessert stall there was Dessert Story which I’ve only tried at Glen Waverly. We were all pretty full after all the dumplings and popcorn chicken so we decided to order one to share.

Miss D really wanted to try the taro shaved ice with red bean so that’s what we had! It was really huge! haha A tower of shaved ice, covered with red bean, condensed milk and pieces of taro. The taro were a little hard for my liking. Would prefer if it was a little softer and sweeter as well, though when eaten with the rest of the dessert, the sweetness was just nice! I was just happy cause there was condense milk. haha I’m such a kid sometimes! I remember how I love having condense milk on those old school Kong Guan biscuits and would secretly make them when my mum wasn’t looking! hehe They were so good (though sinful) though! Would love one now! hehe

So Food Republik is definitely a place I would return (quite soon actually haha) and really wanna bring the Mr there as I know he would love some xiao long baos and popcorn chicken! hehe Be there early though, cause there would be a line from 630pm onwards (on weekdays).

It was such a great meet up with the girls and I can’t wait to do it again! We were all still dreaming of the dumplings the day after! hehe How cute is Miss L above? Last Bits, Good Bits.

Happy Monday my dear readers! Hope all of you had a really good start to the week. More eating adventures continues in this post, but I promise this will be the last one! So thank you for going through this adventure with me the last few weeks! Just re-capping everything we did is making me want to head back to Daylesford again! I hope it has inspired you all to also make a trip down cause you won’t regret it! (:

Of course, we started our day with the same amazing breakfast. How could we not right? hehe Till this day I’m still thinking about the breakfast we had and wanting more. So after we had our breakfast we chilled in our room for a little bit before setting off to try some more cafes this beautiful town had to offer.

Our first stop was Cliffy’s Emporium which was a store, cafe and wine bar. They have a whole range of local produce and their menu changes regularly and according to the seasonal produce. We were still really full from breakfast so we decided to just have something light, although there were lots of things I would have liked to try. Besides, we needed to save some things to try for our next visit, right? hehe

We ordered a small cheese platter and a pot of peppermint tea to go with. The platting was so pretty! Like art on a plate! We sat under the sun and enjoyed each other’s company. It’s really nice how there still seems to be alot of things to share with the mr although we see each other everyday. The best thing about being with your best friend. (: We could just chat and discuss about everything under the sun (pun intended hehe).

The small platter came with two delicious and creamy cheeses : one of which is goat and the other was a type of cheddar. I do apologise that I don’t know the names of the cheeses, as I wasn’t at the table when it was served. There was also a side of maple syrup which went really well with the cheese! Might be something we will try at home soon I reckon! hehe There’s something about the sweet and salty combination I love! Mmm (:

We then found a brochure I picked up amidst the whole pile that caught my attention : $1 oysters at Darmagi! Something my mr adores! He could finish a dozen on his own, and he did exactly that! (:

I don’t fancy oysters, especially when they are raw. The Mr LOVES them. Although they were $1 each, the quality wasn’t compromised! They were plump and juicy! The dozen were all slurped down within minutes! haha According to him, the best way to have them is just with a splash of lemon juice and nothing else! (:

The happy boy with his plate of oysters (: I think he could have had another dozen, easy. hah But I don’t think it’ll be good for his cholesterol!

What I really liked about Daylesford and Hepburn Springs is that their local cafes and restaurants all support local produce and this includes their drinks! Loving their cute logo as well. We had to try some of their sparkling liquid and I decided on the sparkling blood orange mineral water which was really refreshing. Loved it!

The Mr had the organic brewed ginger beer and it was really yummy without an overpowering taste of ginger and spice. Definitely went well with the oysters he had. hehe I have to say, ginger beer (alcoholic or not) is one of my favourite soft drinks! I’m not a big fan of coke or other carbonated drinks. It’s usually either ginger beer or sparkling apple juice to quench my thirst hehe

Before we knew it, it was time for dinner. The Perfect Drop was one place that was highly recommended by not just the retreat but also from other blogs that I’ve read as I was researching on the places to visit. So without much thought, we made a reservation for dinner and headed there, hungry and full of excitement! Before I share with you what we had, I have to apologise that I’ve only got pictures of the entrees we had that night as it got too dark, and the iphone camera just couldn’t take any good shots when the mains and desserts arrived. So I’m really sorry! But here are the entrees we had that night (:

A Perfect Drop is a wine and food lounge that had a very cosy interior. We were shown to our tables by the window, close to the fire place. It was perfect for taking photos (until it started getting dark that is). Still kicking myself as to why I didn’t bring my camera along. But too late now!

After ordering our food, we were served with warm bread with a side of olive oil and sea salt. Nothing beats warm bread to be honest. The smell of the bread slowly envelops the air around us. Just the best smell in the world!

The first thing we ordered was the white anchovies with a boiled quail egg on toast with micro herbs. This was really delicious! Every single bite just makes me crave for more. The white anchovies just melts in your mouth and had the right amount of saltiness. Everything just went together so well. I had to pull myself back from ordering another haha

Another entree that we wanted to try was the homemade beef chorizo. It was delicious, juicy and just filled with spices and did I mention delicious? I didn’t know what was in the green mojo, but it was like a tapenade which complimented the chorizo very well. I never had a beef version before, usually the ones sold in the delis are made using pork. So this was definitely something different. But a good kind of different of course (:

Besides these 2 entrees that we ordered to share, we ordered 2 individual entrees as well. hehe We couldn’t help ourselves. There were too many things we wanted to try!

I ordered the veal carppacio with manchego, celeriac salt and horseradish mustard. How pretty is that? hehe It’s no wonder why people say we eat with our eyes. Don’t you just wanna dive your fork into this plate? I’ve not had veal carppacio, just beef. But they didn’t taste alot different, just a little gamier. But not overly so. i really enjoyed it! If you haven’t noticed, I usually have either a carppacio or a scallop dish for entree. haha I’m boring like that.

The mr ordered the stuffed duck neck with pork and pistachio sausage and it was just delish! When I saw it on the menu, I knew he would have to order it. The Mr is one person I know that would eat every single part of most animals. Yes, even the offal. It also means he doesn’t waste any part of the animal, just one of the things I love about him. (: The skin was crispy and the sausage stuffing was juicy and flavourful. Just a delight with every bite!

As much as I love to say the service was as good as the food we had that night, it was unfortunately a little inconsistent. We didn’t feel as included or welcomed as compared to the other tables. Perhaps it’s just us being sensitive, but there wasn’t a point when we were asked how our food was, or if we were enjoying the meal. In fact, after the first entree, I told one of the staff that it was amazing and she actually had a shock expression on her face, which I really couldn’t understand. It’s a real pity though, cause the food was really really good. But like I say in my reviews, service does play a huge part of the dining experience. So we left the restaurant with a bitter-sweet taste in our mouths.

So this wraps up our adventures of Daylesford and Hepburn Springs! I do hope you enjoyed everything I’ve shared with you! I can’t wait to head back to Daylesford and try the other restaurants that I missed this time round! (: Have a great week ahead everyone! xx

Daylesford Adventures

This being our first time at Daylesford, we definitely had to explore and do some touristy things! But before we set off for our adventure, we had the most amazing breakfast at Shizuka Ryokan.

Our package included breakfast every morning and we could choose between the japanese breakfast set or the usual eggs, toasts and bacon. We decided to try the japanese breakfast and boy were we glad we did! It looked more like lunch/dinner to be honest. But it was absolutely delicious and healthy! Definitely a win-win in our books. (:

After our very satisfying breakfast, we set off on our roadtrip! Our first stop was actually the Information Centre in Daylesford to grab all the brochures and maps! Then we sat down and started planning our route. The first place we decided to visit was the Wombat Hill Botanical Gardens and Lookout Tower.

There was a driving path for cars to actually drive around the beautiful greenery. On each side of the road were rows of trees which kind of reminded me of my dream drive way. hehe And yes, I did remind the hubs about it. hehe But actually, to think about it. I do have a long driveway now. Just that it’s shared with my neighbour. But baby step, yes? hehe

Sitting on top of the hill was the Wombat Hill House cafe, garden and store. Unfortunately, we were still stuffed from our brekkie so we didn’t get to dine there. Definitely will be on our to-go list the next time we make our trip up! hehe Do note that they are closed Tuesdays & Wednesdays!

Our next stop was the Lavandula Swiss Italian Farm. Although it wasn’t the right time to see the blooming lavender flowers, it was still worth our visit there especially since it coincided with the Swiss & Italian Festival! In fact it was the La Primavera, which was the celebration of Spring! They had BBQs and stalls offering a range of delicious food! When we got there, it was so packed and there was just people sitting on their picnic mates, enjoying the sun, food and company!

The Mr and I spotted these beautiful willow trees and the first thing he said to me was, they look like my hair when I was younger! hehe How funny is he? So we decided to snap a shot with it! Please excuse my tired eyes! The weather was absolutely glorious!

It was a pity that it wasn’t the best time to visit the farm. But I could just imagine how beautiful it will be when they are all blooming! It would be a sea of purple, just thinking about it makes me smile! Not forgetting how amazing the whole place would smell!

There was a house on display that showed us a typical house of an italian family. It was really interesting! You could totally tell that the kitchen was the place that brings people together! Definitely my kind of house. hehe

As we walked out of the house, we bumped into a couple of boys doing the mime!

I was told by a few people to try their delicious lavender ice cream and of course I couldn’t leave the place without giving it a try! It was perfect since it was rather warm that afternoon. hehe It seems like everyone was craving for some ice cream cause of the weather.

We order a lavender ice cream waffle cone and a cup of lavender lemonade. The lavender ice cream was really smooth and had a very subtle lavender flavour which we really enjoyed. But the lavender lemonade was nothing special, it tasted like sparkling water with not much of a lavender flavour. Though it did help quench our thirst! I would definitely recommend heading up to the Lavandula Farm especially during their festivals! The next one scheduled is the Lavender Harvest on the 6th of January, so don’t miss it! (:

After spending some time at the Lavandular Swiss Italian Farm, we made our way to Trentham for lunch and to see the beautiful waterfall. On our way there, I just couldn’t not snap a shot of the trees that had blackened trunks, which kinda reminded me of when there was the forest fires a few years back at the Grampians, and the tree trunks look the same. I wonder what the story behind these trees were. Definitely a time for reflection. (:

Our first stop was to feel our tummies! Of course, when you go to Trentham, the place you have to visit is Red Beard Historic Bakery! Sourdough bread! That’s all I could think of, but I was wrong. It was much more than just fresh delicious bread. The cafe serves breakfast, lunch and cakes for tea too! Hidden at the back of a small lane, this was definitely a gem we found!

The first thing that greets you when you enter the cafe are two shelves filled with freshly baked sourdough bread that are all baked in their 140 year old scotch oven! All individually and neatly packed and presented on the shelf. They had a whole range : rye, multigrain, sesame seed crusted, fruit loaf and the special of the day was walnut! I wish I could just buy all of them and try every single loaf! All their flours were stone ground and they even had a wheat free loaf that included a mixture of light and dark rye flour. So there is a loaf for everyone!

They sold jams and other condiments too! Just love the rawness of the cafe and thankfully we found seats as it was the peak lunch time! Lucky us! (:

As the Mr had been driving the whole day, he was craving for some hot coffee – latte was his choice that afternoon. I decided to stick to water to hydrate cause of the hot weather having. Not that I would complain! I would prefer hot to cold weather any day!

We had one of the specials that were available that afternoon : frittata with red onions, chorizo and potatoes. It was SO GOOD. It was really light and definitely the fluffiest frittata I’ve had! We both loved it. Each meal came with a side of mixed greens with a mustard vinaigrette. Refreshing with a little spicy kick to it, YUM!

The other thing we had was a chicken and leek pie which was absolutely delicious! The creamy chicken and leek mixture was enveloped in their own freshly made puff pastry which was buttery, crispy and flaky. Every mouthful was a delight! I wanted more after we finished it. hehe The portions were not huge, but we were leaving our tummies for more yummies later in the day, so it was a serving size.

What I love about this place is that they use seasonal produce so their menu would change quite often. Plus, they are doing their part to protect the environment, what could you not love about that? (:

After filling our tummies, we decided to head to Trentham Falls for a short walk. I don’t know about you, but there is just something magical about waterfalls. They make me happy and at that moment, when you’re infront of the falls, nothing else mattered. Just me, the mr and the waters. One day, just one day, I would definitely visit the Niagara falls. I think I would be in awe! *wanderlust*

Calling all Chocoholics! This is one place you don’t wanna miss! Just 7kms away from Daylesford sits a place that would make alot of people happy : The Chocolate Mill. The first person I thought of was of course Miss D. I knew this would be a place she would not miss if she comes to Daylesford. hehe I was really excited about this place! hehe

There were free demos everyday at 11am and 2pm. We were lucky to reach there just in time! We saw how their chocolates were perfectly made each time and it was a really patient process. Would definitely love to give it a try at home. haha We shall see, too many things I would love to try. The cool thing about this place is that we were standing in a building made out of straw bale! 900 straw bales to be exact! Isn’t that amazing? You know what is more amazing?

and a close up of those perfectly shiny handmade belgian chocolates! YUM! My eyes were drawn instantly to the hazelnut praline, so I of course had to buy a couple for our drive back to Daylesford after. hehe

Love their packaging! I am definitely a proud chocoholic! hehe

We then adjourned to the chocolate cafe for a cup of highly recommended hot chocolate! I was really looking forward to this cup of hot chocolate, cause it was said to be one of the best ones in Melbourne!

I opted for the dark hot chocolate which was so smooth and thick. DELISH! There was a thick layer of melted chocolate at the bottom served with steaming hot milk. We had to stir it well to make sure we weren’t left with a heap of chocolate at the bottom, although that wouldn’t be a bad thing either! hehe

The Mr chose the chilli hot chocolate which had the same smooth and thick consistency but the amazing this was that the more you stir, the spicier it gets! Although it wasn’t the kind of spicy that takes over your taste buds. It was just enough to leave your throat warm and tingly. hehe We definitely left the place with smiles on our faces and bellies very very happy! (:

Not sure if you realise that the mr has loads of Threadless t-shirts which are really cute! hehe He decided to pose the same way as Mr T is on his t-shirt. hehe Love his spontaneity! (:

So what happens when you crave for more hot chocolate after you leave this chocolate filled place? You could always buy a packet of their hot chocolate and all you need to do is add hot milk and viola! (: Cravings satisfied! We bought a couple for the mr’s sister, as she loves her hot chocolate! hehe You have three options : white, milk and dark!

Definitely a whole day of beautiful scenery and yummy food! I don’t think a roadtrip could get any better! Have a great weekend everyone! Staycation : Little Japan

Happy Friday everyone! (: Sorry for the lack of post as I was away for the long weekend on a staycation with the Mr at Daylesford! I decided to give myself a break from doing anything and just concentrated on spending quality time with the hubs. I have to say, it was awesome! We were so excited as it was our first time going on a staycation and also exploring Daylesford, doing touristy things and trying the different cuisines they had to offer. I really couldn’t ask for more.

Because we had such a great time, I am going to use the next few posts to share with all of you what we did during the 3 days in the beautiful spa heaven, Daylesford. Hope you will enjoy and let the journey begin! (:

For those who don’t know, Dayeslford is just slightly more than an hour drive away from Melbourne. We were so blessed cause the day we drove up, the weather was just beautfiul – cloudless blue skies and the sun was shinning brightly! The long weekend couldn’t come at a better time.

The mr found and booked the most beautiful place for our stay : Shizuka Ryokan. It was like Japan hidden within Hepburn Springs! The moment we arrived, you could tell everything was going to be authentic! The architecture, the stone walkways and the best thing is, many of their staff are people from Japan doing holiday work! They were all really polite and warm, making us feel welcomed the moment we walked through the main door.

To get to our rooms that are behind glass doors for privacy, we had to walk through the lobby and dining area where breakfast would be served every morning. I absolutely adored the round hanging lights that covered the whole ceiling! If our lights weren’t fitted in when we bought it, I would have gotten similar ones. hehe

The rooms surrounds this beautiful zen garden that looked like it’s been worked o everyday just to make sure it stays perfect! Just looking at it makes me feel happy. Don’t really know why but I like it! hehe

Shizuka Ryokan is a spa retreat that customers go to relax, rejuvenate, indulge (in the spa treatments and food) and just be sucked into the tranquility of the environment. Because of that, the rooms are not equipped with television or any other form of distraction. It was great cause the mr and I were allowed to have heart to heart talks. Definitely something every couple should do!

I have to admit, when I first entered the room, I was a little shocked at the size of it. It is definitely smaller than your usual hotel room, but I really loved how cosy it feels! The whole room was covered with soft tatami mats and behind the delicate shoji screens was a small balcony that opens to a really pretty private garden. I couldn’t stop smiling and just kept snapping away on my phone! No doubt my favourite part of the room! (:

Our room came with a spa bath that we could use anytime before 10pm to not disrupt other guests’ rest. It overlooks the garden as well so while you enjoy the jacuzzi, you also get to enjoy the greens. The ultimate tranquility. We were also given lavender salts to use while having a bath. It definitely smelled amazing! Love how calm lavender makes you feel. The hotel also provides sandalwood bar soaps. Definitely super pampered this trip!

Once we settled in, we were served with some hot green tea and some matcha short bread. The short bread was delicious, I wish I had more! haha But that’s because I am a sucker for short bread. I think it’s the butter. Just love how it melts in your mouth, and these leave a delicate matcha flavour on my tongue after! YUM! Did you see a small white box at the corner with ribbons? Our package came with a box of famous truffles from the Chocolate Mill! WHEEEE! (: Will talk more about that in my next post! hehe

So back to the hotel. hehe We were booked in for a massage later that afternoon before dinner, so we had an hour to burn before our 60 minutes of bliss! hehe The mr started reading his book and I continued snapping photos. haha This is the shot I love of the mr #likeaboss! (:

Of course I couldn’t take any shots of when I’m getting my massage, but let me tell you. It was one of the best massages I’ve ever had. As I wrote on my form that I felt tightness on my shoulders and upper back, she really tried her best to help me feel less tension! Plus although we were booked in for just a normal relaxation massage, they used hot stones to help release the tension too! Amazing! Hot stone massages are my absolute favourite! I also learned an interesting fact, the area just abvoe your first ear piercing is connected to your shoulder and upper back. So when feeling sore, give it a soft squeeze and it would release that tension. Interesting aye? hehe  So I was super happy and felt totally relaxed after and definitely was ready for our 4 course banquet dinner (:

When we returned to our room, our room was transformed and shifted our tables to the side, to set up the traditional japanese futon beds! How comfy does it look? If not for the banquet, I would have just slept through the night hehe

So just in case you’re wondering, how come there is no food picutres, here they come! The package the mr got for us included a japanese feast, not to mention a bottle of champagne and red wine! haha We were given a choice to either have it in our room or in the dining area. But we chose to have it in the privacy of our sleeping quarters. hehe Course by course, the staff would politely knock on our doors, before serving us and explaining each course to us in detail.

Our first course was a selection of sushi and sashimi with a side of soba salad with sesame dressing. It was too pretty to eat if you ask me! And it felt like ages since we had sushi in this form, cause those you get from sushi sushi is a whole roll. These are much more delicate. It was actually my first time having inarizushi (sweet beancurd skin) and I really liked it! It wasn’t just stuffed with plain rice, but seasoned with seaweed and bonito flakes I think! Delish!

The second course is a medley of vegetable and prawn tempura. The batter was thin, light and really crispy. It was accompanied by a side of dipping sauce with grated ginger and daikon. As a kid, I used to only order tempura when I dined at Japanese restaurants. So when there was a course of tempura, I couldn’t be happier. In fact, I couldn’t stop chomming down everything. hehe

The third course was the hotpot course of beef sukiyaki, so I was expecting burners, raw food and cooking it on our own. haha But it was served all cooked and ready to be eaten! All that was needed to be done was to crack the egg in the bowl, beat it and dip the tender beef pieces into the egg before enjoying them. The beef pieces were so good, but I did think the broth was a tad bit too sweet for my liking. But it’s not just the one from here, I think that of all sukiyakis I’ve had. hehe

Our final course is no doubt something sweet to end the night on a high note : a trio dessert plate ! My favourite was the lemon lime cheesecake as it had a kick to it, the citrus flavour really stood out! The red azuki meringue had red azuki paste folded through the meringue so when you cut through it, it was actually pink on the inside! Really pretty. hehe The mr loved the chocolate and ginger ice cream! hehe I think he just loves anything ice cream to be honest, our freezer would be a judge of that. hehe

We were definitely super happy by the end of the first day. (: You could just tell from our smiles! hehe So if you’re deciding on where to go for a short trip, do consider staying here if you want to have a feel of staying in Japan! You won’t be disappointed!

PS : Just wanna thank the mr for planning this staycation. We both really needed it and it was really awesome being able to spend time with you with no distractions!

Fusion Friday : Seafood Green Curry Penne

TGIF everyone! (: I’m sure everyone is as thankful as I am that the weekend is here and if you’re as lucky, you would have Monday off and thus having a long weekend! Hurray! To celebrate, I’m going to share with you the recipe I promised from my last post of the Fresh Food Market at Highpoint!

I have to say, I’m not a huge fan of fusion food, but I will never turn down the chance to try it when it is presented in front of me. So as I was walking around the Fruit & Vegetable market and bouncing ideas off the Mr, he suggested that I should do an asian flavoured pasta dish! WAH! Why not, yes? So the first thing that came to my mind was green curry! I see this less fusion, more a pasta with an asian flare! hehe

I do apologise that I didn’t quite have the patience or time to make my own green curry paste, but I did find one that I’ve used before, so I knew it would taste yummy. If you have a green curry paste recipe to share with me, I would be more than happy to try it during my holidays! (:

So these were the ingredients I used for my dish. Which includes fresh ingredients that I got from the market, and a few that came in the hamper given by compliments of Highpoint and Mango! (: I am sure you have some things in the pictured stored in your pantry. I realise I didn’t place the onion and garlic that I used from my pantry in the picture. hehe But I’ve definitely written them in my recipe, so fear not!

This pasta dish definitely has a kick to it. It might most definitely be the green curry paste I used but I do love a dish with that leaves my tongue tingly and tummy warm and fuzzy! hehe So if you do like spicy food, and want to try something different, I urge you to give this a try! The Mr and I both loved it and would definitely make this again soon! (:

Seafood Green Curry Penne (a Food Made With Love original recipe, serves 4)

1/2 large onion, finely chopped

3 cloves of garlic, finely chopped

5 shiitake mushrooms, cut into quarters

3 green thai eggplant, cut into quarters

4 purple thai eggplants, cut into wedges

3 small Adelaide tomatoes, cut into chunks

5 grape tomatoes, sliced into half

50g fish cake, cut into strips

100g green curry paste

400ml light coconut milk

300ml water

500g supreme marinara mix

400g dried penne (or any type of pasta you prefer)

2 tbs olive oil

handful of Thai basil leaves

fried shallots and coriander, to garnish

Steps :

1) In a large pot of water, add some salt and bring it to a boil. Cook pasta according to the directions on the packet. Drain and run it under cold water. Set it aside while preparing the green curry.

2) In a frying pan/wok, heat the olive oil on medium heat and fry the green curry paste till fragrant. Add the chopped onion and garlic and fry till it’s soft. Be careful not to burn the garlic, as there would be a bitter after taste.

3) Carefully add the coconut milk into the pan. Stir it until the paste is mixed well and combined with the coconut milk.

3) Add the eggplants and cover the pan, allowing it to simmer for 10 minutes. Then add the tomatoes and mushrooms and return the lid on the pan. Simmer for another 10 minutes or until the tomatoes are soft.

4) Add the water, fish cake and seafood and allow it to come to a boil. Careful not to boil it for too long, as the seafood might over cook and get tough! Add the thai basil leaves and stir it into the sauce.

5) Pour in the cooked pasta and toss it well, making sure every single penne is coated with the sauce. If it’s looking a little dry, add a bit more water and give it a good stir.

6) Garnish with fried shallots and chopped coriander before serving.
