Cocoa, Coffee & Walnut Swirl Cake

I’m in a butter cake phase. I just can’t get enough of it. I think it might be a pregnancy craving. hehe But then, it isn’t a bad craving to have, is it? What could be better than soft and buttery cake? Absolutely nothing! Especially with a hot cuppa – perfect afternoon tea!

Nespresso SG Fortissio Lungo

I was lucky enough to be sent a tube of the new Nespresso flavour – Fortissio Lungo. It’s the first in the Lungo range with a strong intensity (8) and has a richer taste with fuller body. With notes of cereal, the beans are from Central-South America combined with the precious full Arabica Monsoon Malabar from India. I really wanted to make something with this new flavour, and all I can think of is in a form of a butter cake!

And I love swirls in my cake! hehe It’s fun making them and also so pretty before and after being baked! So I decided a swirled butter came with cocoa, coffee and walnut! Mmmm (:

Cocoa, Coffee & Walnut Swirl Cake

250g self-raising flour, sifted

250g butter, room temperature

100g caster sugar

1 tsp vanilla bean paste

3-4 tsp espresso, cooled to room temperature (I used the Fortissio Lungo)

5 whole eggs, room temperature

1 tbs cocoa powder

140g walnut, roughly chopped and toasted

Ingredients

Steps :

1) Preheat oven to 170 degrees celcius. Butter and line the base of a square baking tin and set aside.

2) In a standing mixing bowl, add the butter and sugar, cream till light and fluffy. Add the vanilla bean paste then add the eggs, one at a time, and beat till well combined.

3) Add the espresso and slowly add the flour and chopped walnuts. Mix till all the flour is well combined, but careful not to over mix it.

4) Take half the mixture and place in a bowl. Sift in the cocoa powder in and mix till well combined.

5) Alternately place the coffee mixture and the cocoa mixture into the baking tin.

6) Using a knife, run through the mixture from left to right, then do the same after turning it 90 degrees clockwise. You should get beautiful swirls!

7) Bake the cake for 40-45 minutes, or until a skewer comes out clean after being inserted to the middle of the cake. Allow the cake to cool in the pan for 10 minutes before inverting onto a cooling rack. Make sure the cake is totally cooled before cutting, or it will crumble!

This was a big hit in my family and the addition of the walnut made it yummier in my opinion! hehe (: Have a go and let me know what you think!

Famish’d : Salads and More !

Due to work, it’s almost impossible to have lunch anywhere besides the staff room haha. Thankfully it was the holidays when the newly opened Famish’d celebrated their opening! I couldn’t wait to head down for lunch as I’ve always wanted to try their salads! Their first store was just behind the Mr’s work place, so I used to meet him for coffees and cakes when I get to head down to the city.  So I was super excited when I received the invite!

Beautiful interior, neon signs that pop, warm and friendly staffs. Everything that you would love and look forward to for your mid day delight! And although they specialise in salads (a huge range!), they do hearty soups as well as spuds (both potatoes and sweet potato for a healthier option).

There is definitely something for everyone! I know many of you would be thinking – how can a bowl of salad be filling? Trust me, their salads are HUGE and you definitely will be filled by the time you finish.

Of course, you can’t skip having a cup of St Ali’s coffee as well while you’re there! Beautiful, robust flavours, definitely a pick-me-up when you need one!

It’s really quite magical. Every bite feels like you’re eating a teaspoon full of chocolate chips! Comes with every coffee, dining in or taking it away!

So let’s begin our salad adventure shall we? Since Daisy was there too, we decided to divide and conquer : I was going to choose the salad and she was going to choose the sweet potato spud !  You are allowed to choose the base of either a selection of fresh salad leaves, or their famish’d favourite salads that changes everyday! They also have a huge selection of ingredients to mix into your salad and you are allowed to choose up to 5 different ones!

Don’t worry if it’s your first time at Famish’d cause you would be well taken care of! Everyone working at Famish’d is friendly and is more than happy to explain to you how to design your own salads and spuds! Every one in the Famish’d family works together so well, it’s just amazing! They don’t have specific jobs, they just do anything that is presented infront of them! Like one big happy and loving family! Love it!

When it was my turn to design my own salad, I have to admit, I was like a kid in a lolly store. haha So many fresh and vibrant ingredients to choose from, I almost wanted more than 5!

My colourful salad! After selecting what you want, you can choose from an extensive range of home-made dressing! All the dressing is made by the owner, Georgia, herself! AMAZING!

My salad had pumpkin, chickpeas, corn, artichokes and roasted capsicum! I asked what dressing is recommended and mine has a mix of dijon balsamic and mayo! They do have other dressings for the more adventurous ! I am actually regretting not trying them! Have to head back to try! hehe

The portion was huge and I had to take away half of mine home! A slice of bread is also given to mop up any of the delicious dressing left!

Daisy did equally well with her choices for her sweet potato spud! She had cheese (of course, a must with spuds!), mushrooms, corn, bacon, spring onion and salsa! It was so amazing! I’m definitely gonna have this in my next visit!

Hidden under all the delicious ingredients is a roasted sweet potato spud! So tender and super sweet! Not sure about you, but I prefer sweet potatoes to potatoes anytime! hehe Somehow, it feels healthier! hehe

Sweets by Sweet By Nature

Next to the salad bar sits a beautiful array of cakes and slices! It’s supplied by Sweet By Nature and how good does everything look? After being good and having a healthy lunch, it’s surely okay to have something naughty (and delicious) for dessert right? hehe DEFINITELY! Miss D will agree with me for sure! And of course, we got to try one of each they have!

When this board arrived infront of us, wide smiles appeared on our faces almost naturally. haha How good does that look? Don’t you just want to dive into it and just take a bite of everything? We did. haha

The orange poppyseed cake is still my favourite! And the rocky road was really rich and decadent! Only needed a small bite to make you feel happy and contented!

By no means am I a healthy eater, but I do enjoy having a healthy meal once in a while. This is definitely a place to come to if you are on a health fix too! You can create your own salads and spuds to your liking and I can vouch that you will love every mouthful of it! So if you’re around the city or you work in the city, head down to Famish’d for lunch and I’m sure you won’t regret it! Have a sweet (or two) while you’re there too! hehe

Having afternoon tea has become one of the traditions of my family. Around 3 in the afternoon, the tummy craves for a cuppa and something sweet, just to keep the day going! So even when I was back in Singapore, I went around searching for a good coffee and places that offered a little something to satisfy my sweet tooth! hehe

One of the first places we went to was The Coffee Daily. It’s a quaint little cafe that offered coffee closest to the ones we could get back in Melbourne plus a little something from our childhood.

My dearest brother brought us there and we each ordered a cuppa and it was accompanied by a piece of speculoos cookie and a small plate of gem biscuits! That was the first time I ever had speculoos and it was DELISH! I’m so gonna make some soon cause just writing about them is making me crave for some.

I’m not sure if you’ve had gem biscuits before, but these are my childhood favourite. I use to eat the icing part of it first and then have the biscuit bottom! Been a long time since I’ve had these, so I couldn’t be happier having them with my coffee! hehe

So if you’re ever around the Serangoon Gardens area, do drop by and have a cuppa! Having these gems would most definitely bring you back to your childhood days! (: It sure did for me.

P.S. Cafe on the other hand is a totally different cafe for your afternoon tea. Tim brought us to the one at Harding Road (Dempsey) and it’s a converted warehouse that just looks amazing! Surrounded by beautiful nature, it felt so relaxing just sitting (indoors and outdoors) and having a hot cuppa and one of their amazing desserts they have to offer!

Of course, I wanted to do Miss D proud and order everything that was on the board, but having only three of us and cause we had a super full yumcha lunch just before, our tummies only allowed us to order 2! (:

Banoffee Pie

When the banoffee pie arrived, my jaw dropped! hah I couldn’t believe how much cream was on it! A little too much, in my opinion. But the filling was great! A crumbly and delicious base, with caramel and fresh sliced bananas. Even without the cream, it would be delicious!

Carrot Cake

I also chose the carrot cake and so glad I did. It was moist and dense and had the right amount of cream cheese frosting to go with! I love a good carrot cake and this is definitely it!

Assam tea

I ordered a cup of assam tea to go with the sweets. The flavour was bold but was still quite delicate and it paired well with the richness of the pie and cake. Made me feel less guilty after drinking it, though I know it’s just me trying to feel better after all those sinful cream and sugar. haha But I know that I would definitely wanna head back to have the other desserts and even give their food a try! (:

The next place is one that I have been anticipating to try for over half a year! I have been seeing everyone enjoying their flaky croissants and pastries on Instagram and I couldn’t wait to sink my teeth into some! As the trip back was considerably short, we had to squeeze as many places as we can in a day, so the trip to the bakery happened after a very full breakfast at Tiong Bahru Market! But by hook or by crook, I told the Mr that we had to try this place!

The choice wasn’t easy when I saw what was on display! I was SO tempted to just order one of each but decided to be good and try one of the them that instantly caught my eye.

This lovely pastry had layers of puff with butter and sugar in between each layer and every mouthful was just divine! I happily tore layer by layer and it starts with a crispy outer layer. As you peel your way through, it gets so soft and it just melts in your mouth. Heavenly! Absolutely amazing.

How cute is the drinks board? hehe I would want one just to put it in my kitchen! or near the coffee machine hehe Love it!

And as a digestive, the mr ordered his espresso (he is starting to love his shot of coffee now a days) and I had the cappuccino. Everything looked so pretty on the plate hehe (: Sadly, I didn’t get the time to head back and try the other yummies, but I will definitely be back at the end of the year to try more!

The last place I had a chance to have afternoon tea at during my trip back was Arteastiq! It’s located at Mandarin Gallery and I adore the concept they have! It’s a tea house next to the an art studio, where people could sign up for painting classes. It’s an open concept and you could see the beautiful art pieces that people are painting! Sometimes, I wish I was more artistic! haha Anwyays, back to what I had hehe I met Felicia for tea that afternoon and when I browsed the menu, I knew exactly what I was going to have.

Sorry about the quality of the photo, the sun was shining too brightly on my drink! But I ordered the lychee ice tea, and if you don’t already know, I LOVE lychees! hehe Lychee anything to be more specific. This tea was so refreshing and it came with an almond biscotti and a peanut mochi. Mmmmm (:

Longan, red date and goji tea

Felicia ordered something a little different : a hot longan, red date and goji berry tea. It was delicious and even without adding the sugar, it had a subtle sweetness to it. Hers came with an almond biscotti and a sesame mochi. The seats were really comfy and it’s just a really nice place for girls, especially, to hang out with their friends and catch up (: That was exactly what we did! hehe

Coffee Hit : Famish’d

The holiday food adventures continues! The Mr brought me here after our wonderful lunch at MissChu for some digestive – coffee and cakes. Just what we needed to complete our lunch. There is ALWAYS space for dessert, or some kind of sweet, regardless of how full you are. haha Trust me!

 Love the decor of the place. You feel a kind of comfort I can’t really describe. Everyone is so friendly there and the Mr said that they actually address you by your name when you’re a regular. Adds a personal touch to your visits here and definitely allows you to be more comfortable while dining there. How fabulous is that? To me, great service is everything!

Famish’d is actually known for their salads. It’s almost the same concept as Salad Stop in Singapore, where you can actually design your own salads, and pick your combination from a whole huge range of different ingredients. Or pick from daily salad special which are the hot favourites! How exciting is that? And now that it’s winter, they offer a soup special daily with freshly baked bread! YUMS! I am definitely returning back on an empty stomach to try their salads and soup!

But for this visit, I was there for some sweets and a good cuppa coffee using St Ali coffee beans.

When I saw what they have to offer, I just instantly picked these two cakes : citrus & poppyseed and orange & almond ! The cakes had a burst of flavour the second it touches your tongue and they were so moist. It’s a slightly denser cake, but I actually like dense cakes. haha Feel like they have more bite to it!

We both had lattes. Just that the mr ordered their large. And their hot drinks all came with a meringue that will filled with a surprise. It’s filled with chocolate chips! I have no idea how they make it, cause you don’t see the chocolate chips till you bite into it!

I do apologise that I didn’t get a shot of the chocolate chips in the meringue. I got too excited and it was too delicious, I finished it in 2 quick bites. haha I guess I just have to head back to have it again!

 I can’t wait to head back to try the food they have to offer. I have a good feeling they will be yummy! (: So if you work in the city and want a healthy and hearty lunch or even just a cuppa and something sweet, why not drop by and satisfy that hunger!
