{Spencer Cooks} Muah Chee

I was always someone who loved snacking. Afternoon tea times are a time of the day I look forward to as I get to sit down, have a hot cuppa and something savoury or sweet to just fill my tummy before dinner. There are lots of small snacks that is easily attainable back in Singapore. However, it is a little more difficult to find it here.

So when I chanced upon a Muah Chee recipe, I HAD TO make it! It was the perfect snack for a Sunday afternoon. Muah Chee is a snack that we usually can get from night markets or hawker stalls. Small pieces of glutinous rice balls rolled in a sugar, peanut and/ or black & white sesame mixture! Every bite satisfies both the sweet and savoury craving to be honest! Which is why I love them!

I couldn’t quite believe how quick and easy it was to make this in the Thermomix. Everything was done and ready to be enjoyed in 20 mins! And I can’t really put the joys of being able to make something from scratch in the comfort of my own home in words! So I will let the pictures do the talking! hehe

Little nuggets of deliciousness wrapped in a sugary peanut, white and black sesame mixture! SO SO GOOD!

Here’s the recipe for the muah chee. For those who have been craving like me, and to those who’s never tried it before. Please do give it a go! You won’t regret it!

Muah Chee 

150g roasted peanut (without skin)

30g toasted white sesame

30g toasted black sesame

40g coconut sugar

120g glutinous rice flour

180g water

2 tbs olive oil

1000g water, for steaming

Steps :

In the TM bowl, add the peanuts, half the amount of white & black sesame, and sugar. Chop for 5secs/ Speed 8.

Pour the mixture into a bowl and mix the rest of the sesame seeds. Set aside.

In the TM bowl, add the glutinous rice flour, water and oil and mix for 1 min/ Speed 6. You should get a smooth flour mixture.

Pour into a shallow bowl and place the bowl into the Varoma deep tray. Place 1000g of water into the TM bowl and place the Varoma deep tray on top of the lid. Steam the mixture for 15mins/ Varoma/ Speed 3.

Once steamed, use a teaspoon, scoop and cut into pieces and toss into the peanut & sesame seed mixture. Make sure the glutinous rice balls are coated well.

Serve and enjoy immediately!

Kale Chips Two Ways

Sorry for the long pause dearest readers! I’ve been away in Singapore spending time with my family and friends so didn’t really have the time to post the delicious food I’ve been having! But I promise that I will be sharing with you my food adventure in my next few posts! But before I do that, I want to share with you a super snack : kale chips !
Kale is not something I’ve eaten often. But the few moments that I had the chance to have it, I absolutely loved it. I had them as a side to my mains but never had it as a snack before. Some time last year, I’ve seen people making kale chips and I really wanted to make some myself. So when I saw some at Dandenong Markets this morning, I had to get a packet.

When I got home I couldn’t wait to get started! Just the idea of having a healthier snack option was enough to make my belly happy! hehe Especially since I’m trying to get back into a healthier lifestyle. That’s my goal set for this year (: So if you’re like me, and would like to have an option of a healthy snack. Do give this a go! The hubs and I are totally addicted to it now and it’s barely been 12 hours since I’ve made it!
So be warn, cause these are definitely addictive! hehe
Cayenne & Sesame kale chips
Cayenne & Sesame Kale Chips (A Food Made With Love original recipe)
1/2 a packet of kale
1/2 tsp salt
1 tsp cayenne pepper  powder
1 1/2 tbs toasted sesame seeds
1/2 tbs olive oil
Steps : 
1) Preheat the oven to 150 degrees celcius. Line 2 baking trays with baking paper. Trim the tough stems from the kale and discard. Cut the larger leaves into smaller pieces (about 2 inches); leave the small pieces whole.
2) Place the leaves in a large bowl and drizzle with olive oil. Give it a good toss. Season with salt, cayenne pepper and toasted sesame seeds. Give it another good toss, to make sure the leaves are well coated.
3) Arrange the kale on the baking sheets in a single layer and bake for 10 minutes before rotating and bake for another 5 minutes until crispy. Remove the trays from the oven and allow them to cool for a couple of minutes. Transfer to a large serving bowl.

Chilli & Parmesan Kale Chips (Adapted from Whole Foods Market)
1/2 a packet of kale
1/2 tsp garlic salt
1 tsp chilli powder
1/2 tbs olive oil
1 tbs grated parmesan
Steps :
1) Preheat the oven to 150 degrees celcius. Line 2 baking trays with baking paper. Trim the tough stems from the kale and discard. Cut the larger leaves into smaller pieces (about 2 inches); leave the small pieces whole.

Lemony Blessings

I always considered our lives very blessed. We always get what we want and we have constant love, care and support from our family. What more can we ask for? But God is amazing. I came home one day after work and found a few bright yellow round things in our garden. My first thought was : someone has been throwing tennis balls into our backyard? haha But when I got a closer look, they were lemons that fell off our neighbour’s lemon tree! (: The winds and rain were so strong, the lemons flew into our backyard! What blessings! Showers of blessings indeed!

So what do you do when you suddenly have a whole bunch of lemons? Make lemon meringue cupcakes filled with luciuus and tangy lemon curd, of course! It’s been a cupcake I have been wanting to make for the longest time. Ever since the first Junior Masterchef when Isabella made her beautiful cupcakes for the Mystery Box challenge! So I decided to make the curd a day before, and wake up early on a Saturday morning to make these gorgeous small cakes.

I started bright and early, so much so that I could try two cake recipes! I was drawn to the recipe on Gourmet Traveller (September 2011 Issue) that was from the Rockpool Bar & Grill. So I couldn’t resist making them. I just had to make both cakes. They were very different. Not just in the type of ingredients used, the way it’s made and also the texture. The cakes using Isabella’s recipe turned out soft and fluffy. But the ones from the Rockpool’s recipe turned out slightly denser and gooey-er (see above). I really couldn’t choose between the two! Both were delicious!

What I really like about Isabella’s recipe is that she didn’t use butter in her cupcakes, so you could practically whip it up really quickly! You don’t have to wait for the butter to soften, which is definitely a plus! And I would like to say that it is healthier. MAYBE. haha But well, regardless. They were both delicious! Just depends on what texture you like more. So I’m going to share both recipes, and you can decide which you like more! (:

*Note : I used the same lemon curd and Italian meringue for both cupcakes and the recipes below are more than enough for all the 24 cupcakes made (12 from each cupcake recipe). 

Lemon Meringue Cupcakes

Lemon Curd (adapted from Gourmet Traveller – Rockpool Bar & Grill)

5 eggs

155ml lemon juice

1 tbs lemon zest

180g caster sugar

150g butter

*Cupcake 1 (adapted from Gourmet Traveller – Rockpool Bar & Grill)

155g caster sugar

155g butter

155g self-raising flour

1 tbs lemon zest

1 tsp vanilla paste

75ml milk

Italian Meringue (adapted from Gourmet Traveller – Rockpool Bar & Grill)

200g caster sugar

80ml water

140g egg whites

1/2 tsp cream of tartar

Steps :

1) For the lemon curd : Whisk the eggs in a large bowl, then strain them through a sieve. In a heavy-based saucepan, add the butter, lemon juice, sugar and zest. Stir until the butter is melted and sugar is fully dissolved. Add a little of the lemon mixture to the eggs to warm it up, then gradually add it back into the saucepan, stirring continuously.

2) Cook the mixture over low heat, stirring continuously and scraping the base of the saucepan until it thickens and coats the back of a wooden spoon. This will take about 8 minutes and make sure the mixture doesnt boil or else it will curdle. Allow the mixture to cool completely, before covering it and put it in the fridge until it is chilled. (At least an hour, but I prefer to make it a day before, and let it chill overnight). This is enough for the 24 cupcakes I made, and leftovers could be kept in an airtight container in a fridge, up to 2 weeks.

3) For cupcakes* : Preheat oven to 180 degrees celcius, and line a 12-cupcake tray with liners. In a mixer, beat the butter on medium speed for a couple of minutes, before adding the sugar. Beat the sugar and butter until light and fluffy. Add the eggs, one at a time, and mix until the mixture is smooth. Add the lemon zest and vanilla paste and mix it for another 2 minutes. On low speed, add the flour and milk (alternately) until just combined. Careful not to overbeat the mixture. Divide the mixture evenly into the cupcake liners and smooth the top out. Bake the cupcakes for 15-20 minutes, until the tops are golden brown. Turn them out onto a wire rack and allow them to cool completely. (For Isabella’s recipe, please see below)

4) For the Italian meringue : Combine the caster sugar and water in a small saucepan over medium heat and sitr the mixture until the sugar has completely dissolved. Increase the heat to medium-high, and allow the sugar mixture to reach a soft-boil stage, without stirring (about 121 degrees celcius on a candy thermometer).

5) In a mixer, whisk the egg whites with the cream of tar tar until soft peaks form. On medium speed, slowly and carefully pour the hot sugar syrup into the whipped egg whites. Continue to whisk the mixture on medium speed until the mixing bowl feels cool, and the egg whites are thick and glossy. Fill a pipping bag and use immediately.

6) To assemble : Cut a whole in the middle of the cupcakes, big enough to fill 2 tsp of lemon curd. Fill a pipping back with the lemon curd and gently fill the holes up. Pipe the Italian meringue onto each cupcake, making sure you cover the curd completely. Using a kitchen blowtorch, carefully brown the meringue before serving.

*Cupcake 2 (adapted from Junior Masterchef – Isabella’s Recipe)

1 cup thickened cream

3/4 cup caster sugar

2 eggs, lightly beaten

1 1/2 cups self-raising flour

1 tbs lemon zest

Steps : 

1) For cupcakes* : Place cream, sugar and eggs in a mixing bowl and whisk until smooth. Gradually add the flour (1/2 cup at a time) and zest and continue to whisk until thick and smooth. Spoon the mixture into the cupcake liners and bake for 15-18 minutes. Turn over on a wire rack and allow it to cool completely before filling them up with the lemon curd and topping with the Italian meringue (recipe and steps as stated above).

We were going to East Point to collect mummy’s specs and decided to find something to eat near the area. We headed to Bedok! (: And boy was I glad we did! We found where the famous Jalan Tua Kong Mee Pok is! You see, Paul and Peggy have been talking about this place for the longest time, and after trying their chilli (which can be bought from there), I had to try this place. It was THAT good. (:

when you do visit this place, be prepared to wait. There is ALWAYS a crowd! We were there at almost 3pm and it was still crowded!

we ordered the small bowl of noodles ($3) and it was just nice for us, but I think for the big boys, they would need the bigger bowl ($4).

it was SO GOOD. (: loved every single bit of it! The noodles were cooked to perfection and they really gave heaps of meat for such a small bowl!

it came with a bowl of soup which was really tasty! yes i know, I only got good things to talk about this time. (:

we also went to get mini soon kuehs! It has been my favourite since I was really little. Dad use to buy it for me on his way home from work, cause he knew I like them! hehe yes. I was always a daddy’s girl. hehe. This time, for the first time, I went there with my parents.

I should do this more often. Going to areas in Singapore that I seldom go to and try their food there!
