Good evening dear readers! I hope you had a good weekend! I sure did and I always wish it would last longer! Weekends are always really precious to me, especially when there are special events to attend. A couple of weeks back, I was lucky enough to win an instagram (follow me on @lianneelow) competition by Three Bags Full (@threebagsfullmelb) and won a free brunch for me and 3 friends! WHOOPEEDOO! I couldn’t quite believe it, in fact I didn’t know it until Ling P (@sixinchheel) texted me and told me I was one of the lucky winners!

Winning brunch at Three Bags FullI called up and booked a table for the approaching weekend and I knew who I would ask along. The Mr, without saying, and the Hum family! (: I had to see my munchkin at least once a week. haha I am obviously obsessed with that girl!

When we arrived, we were warmly welcomed by all the staff and Sam, the manager, told us to go crazy! haha The interior was really warm and welcoming and I absolutely loved the decor.

We couldn’t stop smiling and just wanted to have everything on the menu, cause everything looked and sounded delicious! While deciding, we ordered our drinks!

I couldn’t go pass having my chai soy latte, as I was really craving for some warmth and comfort.

The boys, who loves their coffee, were recommended to have the hot aeropress coffee (kenya blend) and while waiting for it to be ready, they made some cold drip coffee (same kenya blend) for us to try!

How pretty is the bottle that the cold drip was served in?? I wanted to steal it home! Don’t worry, I was good and I didn’t, my left hand smacked my right. haha

Served on a cube of ice, we could taste notes of rhubarb and blackcurrant. I actually really liked it! I was a little hesitant at first cause I didn’t know if it would be too sharp, tart or bitter for me. But it was actually really fruity on the palette. I wanted more! hehe

The aeropress was a little more acidic cause it was hot and the fruity notes weren’t as prominent! But it was still good and a great recommendation!

The Mr and I decided to order the specials of the day as they sounded absolutely mouth-watering! Plus I also had a sneak peek of how they looked that morning on instagram! haha So my mind was set even before I arrived!

I was sold on the braised white beans with porcini mushrooms, grilled chorizo and poached eggs! Ever since I had braised white beans in Barcelona, I can’t get enough of them! These were mashed with porcini mushrooms and the flavours were just amazing! Everything went so well together, I just couldn’t stop eating and cleaned up the whole plate!

The mr chose the other breakfast special : grilled barramundi with quinoa salad, sauce soubise, spinach puree and pickled chilli salsa! The salad was so refreshing and had so much bite to it! I was so inspired by the dish I actually went home to make my own version of it! The barramundi was grilled to golden brown, so fresh!

The mr couldn’t help but order a side of istra bacon. The boy definitely needs his protein! hehe

Big breakfast

Paul & Peggy both ordered the big breakie that was like a breakfast platter of everything delicious! They love their hollandaise sauce so they decided to order a side of it. It was thick and luscious and one of the best hollandaise they’ve tasted! Ooh -la-la!

After the savouries, Sam was so generous to allow us to order some sweets as well! There were so many to choose from, but our eyes were set on the cupcakes : carrot cake and chocolate & salted caramel! How can it go wrong?

Paul and Peggy are huge fans of carrot cake. This one was to-die-for! The cake was so moist and had just the right amount of spices, and the cream cheese frosting was rich and delish! After every fork-ful, Peggy and I just looked at each other and kept saying “Wow! So good!” haha

Chocolate & salted caramel

This, however, was AMAZEBALLS! Chocolate, chocolate and more chocolate! And there was a surprise in the middle. Could you guess what?

A liquidy salted caramel middle!! The moment you slide your fork through, you have liquid gold flowing out! So rich, so darn good! Definitely made me think of Miss D! The desserts were so good that we both bought each cupcake home to have again for dinner that night!

Fritters & French Toast Heaven : Fitzrovia

Dear readers, have you ever met a friend who you haven’t seen for a long time? I have recently, and the last time I met Gazel, we were 12. So when she was in Melbourne for a holiday, we decided to meet up. Our first meet up was at Top Paddock, and we decided to meet before she heads back to Singapore as well. And thankfully she loves brunch too, so we decided to head to Fitzrovia (thanks for the recommendation Daisy!) !

It was a perfect location as Gazel wanted to get some salted caramel and Cacao was just across the road! hehe so we were set on Fitzrovia and when we stepped into the cafe, it was really busy but we got our table in less than 15 minutes! Which was perfect, cause seeing and smelling all the food being served around us made our tummies rumble!

Latte

I decided to order a latte instead of my usual chai latte, cause the house blend was from St Ali. I am no expert on coffee, but this was my second cup of the day as Gazel bought me my first cup of coffee from her favourite cafe : Brother Baba Budan! So I decided to have decaf, and I really enjoyed this cuppa, smooth and creamy!

Gazel loves her coffee. She is currently having withdrawal symptoms as she can’t get the same quality of coffee back in Singapore. It’s just not the same! She was prepared to have at least 3 cups of coffee everyday before she left. haha This was her second cup of the day too, so she also ordered decaf!

While waiting for our table, we had a quite browse of the menu and we kinda knew what we wanted there and then! My choice was the sweet potato and caramelised fritters, which is of no surprise, cause I absolutely love fritters of all kinds! haha But this had everything I truly love on a plate! The moment it was served, the first smell that hits you is the truffle in the salsa verde! That instantly puts a smile on my face. I couldn’t wait to taste everything on the plate! The fritters were really fluffy and the grilled saganaki. HOLLY MOLLY! It’s similar to haloumi but the crust is crunchy! Amazing!

Gazel ordered, what I think, is the breakfast of champions. Creme brulee french toast, with Istra bacon, bananas, whipped mascarpone and toasted pecan. The french toast… actually has that crunchy layer of burnt sugar and after biting (cracking)  that layer, the toast melts in your mouth!

And there’s something magical about the sweet and salty combination isn’t there? Especially when the salty component is BACON! Noms! You really can’t go wrong in this dish! WIth fresh bananas and a creamy whipped mascarpone. I definitely want to head back to have this!

So if you love your fritters, and you also love french toast, I urge you to head to Fitzrovia pronto! hehe You will definitely not regret it! We definitely didn’t and left with happy bellies! hehe

After all the delicious food, we went on our hunt to find a photo booth! We went to the main street of St Kilda but we couldn’t find any! So we decided to try Luna Park and found one at the games arcade! Thank you so much for meeting up with me! Will catch up with you again soon! (:

Yarra Valley Chocolaterie : Hot Chocolate Festival

I have a love-hate relationship with chocolate. More love than hate of course. But after scoffing down too much chocolate, that’s when the hate sets in. But it doesn’t last for long. My love for it is overpowering. haha So you can imagine my face when I walked through the glass doors of the Yarra Valley Chocolaterie! Yeap! You guessed it right! Wide grins, round eyes and I marched straight to the huge bowls of chocolate that are for free tasting. How generous! But just so I don’t look greedy, I just took a (heap) tablespoon full of the dark chocolate buttons and stepped away.

Hot Chocolate Festival

It wasn’t my first time at the chocolaterie, but this time I was really lucky to be asked to the Hot Chocolate Festival by Yarra Valley Chocolaterie & Q Strategies to try 8 out of the 31 limited edition flavours they’ve come up with for the month of August! I went with the blogging gang (Shellie, Daisy, Thanh, Agnes & I-Hua) and we were allowed to bring our partners (and Melissa!) along, so it was like a fun road trip with a whole huge foodie gang!

These were the 7 + 1 flavours we tried that morning. Yes, we had hot chocolates for breakfast! hehe What could be better yes?

Josh - Head barista

We were introduced to Josh, the head barista at the chocolaterie. He’s the one who comes up with all the different flavours! Amazing! From the moment we gathered infront of him, pots and pots of hot chocolate arrived and were served! We were definitely in hot chocolate heaven!

Each cup (thank goodness they were mini ones!) had a different topping to match the flavours!

So without further ado, here comes the hot chocolates! I’m introducing them in the order that we were having them! Of course, I have my top three choices of the morning and you’ll see them next to their flavours! hehe So, first up….

Gingerbread

Gingerbread (2nd place)! This was made using their milk couverture chocolate and had quite a strong cinnamon and ginger taste to it, which I love! It was served with some gingerbread crumbs which gave a slight crunch to the drink.

Mint madness

Next up was mint madness! This was also made with their smooth milk chocolate and served with a fresh mint! I actually quite enjoyed this, as it reminded me of an After Eight chocolate! hehe and I absolutely love those thin pieces of chocolate! hehe

Cookies & Cream

Cookies & cream was somehow known as the King Kong of all flavours made with smooth milk chocolate and topped with crushed oreo cookies! This was delicious but it kinda of tasted like normal hot chocolate, and nothing too special. Though the crunch of the cookies added a good texture!

I’ve been into coconut everything these days, so I was quite excited when I saw Pina Colada (3rd place) on the tasting menu! It had a strong coconutty flavour made with white chocolate and topped with toasted coconut! DELISH! hehe It was quite a favourite among us that day to be honest!

Indian Chai

When the next flavour was indian chai, Shellie and I were smiling at each other, as we both love our chai! Unfortunately, the dark chocolate was a little overwhelming and I couldn’t really taste the chai spices. Sad face! I really thought this would make number 1 on my list!

Snickers

This, ladies and gentlemen, is SNICKERS! The champion of the day! It was so delicious, and it really felt like you were having a snickers bar. It was nutty and chocolatey. Everything a hot cup of hot chocolate needs! Topped with roasted slithers of almond – A perfect cup! I secretly wanted another cup! haha But had to safe some space for the two more to come!

Lemon myrtle

If you’re a fan of lemony and citrusy drinks, this would be the one for you! I never thought that lemon would go well with chocolate. But after drinking this, your mouth is left with a subtle taste of lemon, kinda refreshing! Each cup is topped with a candied slice of lemon.

Jaffa

Our last cup for the morning was Jaffa. It was a special addition to the tasting menu we had! Before we could taste it, Josh grated some orange zest and the aroma of oranges just filled the air!

Handmade marshmallows

After all the hot chocolates, we were also introduced to some handmade marshmallows! There were 4 flavours (from top) : tropical, vanilla, strawberry & chocolate ! They were all so FLUFFY (imagine me saying this in Agnes’ voice, from Despicable Me! haha) !!! Loved it and they weren’t overly sweet! I had to stop at one though, cause I definitely reached my sugar quota for the day! hehe

After the private tasting session, we walked around the chocolaterie and it was like being in Charlie and the Chocolate Factory! Every where you walked to, you would see chocolate of all kinds!

So do go and visit the chocolaterie before the end of August and taste all the different flavours of hot chocolate they have to offer and hit a sugar high! (: You’ll definitely enjoy it as much as we did!

Bayte : A Lebanese Feast !

Brunch at Bayte

I know I’ve said numerous (countless) times, how much I love brunch. But I need to say it again. I LOVE brunch! Especially since there are so many different varieties of brunch we can get here in Melbourne. The first time I went to Bayte, I went with 3 beautiful ladies (Ashley, Lee & Sofia) and as it was my first time meeting them, I was a bit too nervous and didn’t get to snap photos with my camera! haha So it was due to head back and have brunch, this time with some of my favourite and closest friends.

Yes. This my dear readers is my favourite girl who steals my heart every time I see her, Paige. hehe Isn’t she just gorgeous? hehe She was all smiles that afternoon and couldn’t stop playing with us and have short burst of laughters! Just absolutely adorable! hehe Such great company we had for brunch that day!

Story behind Bayte

The menu is a true reflection of what lebanese food is and should be. Full of robust flavours and worth celebrating about! Chef Julie Touma came up with the menu which was inspired by her grandmother’s recipes! Just reminds me of how much I miss both my mum’s and grandmother’s home cooking and how I am constantly inspired by them too! (Can you tell I’m a little home sick?) Bayte means home in Arabic, and you definitely feel welcomed the moment you step in. I couldn’t wait to have the food again and definitely couldn’t wait to have their freshly brewed chai!

Their freshly brewed chai was with Bonsoy (my favourite) and had flavours of cardamom and cinnamon. Definitely hit the right spots! hehe If you would like an extra kick and you’re a coffee lover, ask them for a shot of espresso in yours. The combination is DA BOMB! I recommended it to Peggy as she loves both chai and coffee, and she really enjoyed it! She even said it was nicer than the chai itself! But I do love my chai pure. hehe

I really wanted the baked eggs as it had everything I was craving for. Perfectly cooked eggs (which were still molten and gooey), with an okra and tomato spiced stew and shanklish cheese! OH-EM-GEE! It was love at first bite! The cheese was the right amount of richness and hit of salt and had a crumbly and soft texture. The okra was so soft and the stew had the right amount of spice to leave a warm and fuzzy feeling in your mouth and tummy after! A perfect winter warmer! I couldn’t be happier and more contented with my choice! (:

Poached eggs

Peggy had the zaatar spiced poached eggs with a pumpkin and pinenut kibbeh and hummus, with some freshly made flat bread. The zaatar had a nutty flavour to it and the eggs were perfectly poached! The bread was so delicious that even our youngest foodie enjoyed it!

If you’re hungry and you would want to try a bit of everything from the menu, then the breakfast mezza for one (there is for two as well) is for you! That’s exactly what the boys went for! I mean, why wouldn’t they? It’s like the best of what the kitchen has to offer all on a plate. I have to say, the lamb skewer was delicious! Even for a person who doesn’t eat lamb! hehe

It even came with a spiced fried egg! A celebration of lebanese food, a party in their mouths!

Melissa decided to have the sumac spiced fried eggs with kafta lamb skewers and baba ghanoush. I could have ordered a whole plate of baba ghanoush to myself! Smooth and creamy mashed eggplant and went perfectly with the spiced lamb! Nomtastic!

So the next time you’re thinking of having something different for brunch, do head down to Bayte! You will definitely not regret it! Amazing food with friendly staff and great company! There’s no better way to spend the weekend, really! I do hope you all had a brilliant weekend too!

Grain Store – Grand Opening

There’s many things I love about Melbourne. One of which is how new cafes and restaurants pops up everywhere and there will always be something new to try!  Slightly more than a month back, I was invited (with many food bloggers too!) to the grand opening of the Grain Store. Before I got the invitation, I was wowed by the pictures of their interior decoration. So I was super excited to try their food! hehe I do apologise if my photos are a little yellowish! I’m still learning hehe

I wasn’t sure how they were going to fit so many of us, as we were allowed to bring up to 3 guests with us! But the place was really spacious and had tables all well spread out. The serving style of the evening was tapas which was perfect, so we got to try alot more things in a much relaxed environment! hehe

The first thing I had that night was a couscous and quinoa salad on red witlof. The freshness and crunch of the salad went really well with the subtle bitterness of the witlof. I definitely wanted more of this! hehe So so so good!

Next was the black pudding on puff pastry. Although I’m not a big fan, the black pudding went really well with the buttery puff pastry!  I have to admit, when it first arrived, I thought it was on a pikelet! hehe Kinda reminded me of bellini (mini pancakes), right? hehe

This, my dear friends, was one of my favourite of the night. What could be better than a combination of spuds and cheese? Spuds, cheese and cream! hehe These golden and crispy potatoes are cut into cylinders and hollowed and stuffed with cheese! There were DELISH! Definitely wanted more!

Polenta chips

When the polenta chips arrive, I was grinning! One of the my favourite things ever! I’ve been addicted to it since the mr made them! hehe These were really good! Super crispy on the outside, soft and pillowy on the inside! Definitely wanted more than one!

These prawns were so sweet and succulent and went perfectly with the crispy crustini.

Small masterclass

In the middle of our nomming session, we were invited to the back of the kitchen, where all the magic happens! hehe Chef Ingo was going to give us a mini masterclass of how to make beef tartare! Straight away, I turned to look at Melissa (my sister-in-law who was my plus one for the night) and her face immediately lit up! She’s a huge fan of beef tartare, so I knew she would be thrilled!

Chef Ingo used tenderloin, parsley, capers, french shallots, chives, gherkins, light mayo, dijon mustard, Worcestershire sauce, lemon juice, a touch of cognac and seasoned with salt! For a small dish, it sure has lots of ingredients! hehe It’s no wonder it’s so tasty and it just melts in your mouth! Of course, Melissa had 2! hehe Everyone knew she liked it so they allowed her to have another! So nice of them! She was definitely a happy girl that night (:

The house smoke salmon  was beautiful and went so well with the crisp and the slight bitterness of the witlof. Yummm!

Ginger Beer

As I was the designated driver of the night, I ordered organic ginger beer. I love ginger beer. It’s my choice of a fizzy drink (as well as lemon lime bitters)! So refreshing and just the right amount of ginger kick! hehe

Just before we left, they came around with some delicious and mouth-watering pork fritters! OMGNESS. These were just to-die-for! They just melt in your mouth and the crumbs were golden brown and crispy! I’m so glad I stayed long enough to try them! YUMMEH!

Just want to thank the Grain Store for inviting me to their grand opening! I had such a good time and it was great seeing familiar faces too! hehe Absolutely loved the food and I can’t wait to try their breakfast & lunch menu! Definitely have to head down soon!

Sunday Brunch : 8 Days Cafe

8 Days Cafe - Armadale

The phrase ‘8 Days’ have been something that I grew up with in Singapore. If you’re from Singapore, you would know and have read the ‘8 Days magazine’ and also heard (numerous times) their advertisement song. It’s a weekly magazine that include celebrity gossips and reviews of tv shows in Singapore, similar to the Women’s Weekly or New Ideas that we have here (: When I first saw Miss D’s post on the 8 Days Cafe, there was only one tune that came into my mind. Coincidentally, I told the Ho Clan where we were heading to for brunch a few Sundays back, and we all started humming to the tune simultaneously! haha

Our drinks

It was really packed that Sunday morning. Lucky for us the weather was beautiful and quite warm considering that it was the end of Autumn. So we decided to take one of the outdoor tables instead of waiting for a table indoors. The heater was also switched on for the occasional cool breeze, just to keep us warm and toasty! hehe We all ordered our usual hot cuppa of latte (for the Mr), chai soy latte  (for me) and a hot chocolate (for Melissa). But it was not an ordinary cup of hot chocolate. It was a nutella hot chocolate. Yes, you read right. NUTELLA! Every mouthful tasted like you were eating teaspoons full of nutella out of the jar. Super addictive! hehe

We all had a glanced of the menu and knew almost instantly what we wanted. haha Sometimes we are so predictable, I think we could just order for each other anywhere we go. hehe

Melissa ordered the smoked salmon and leek croquettes with grilled asparagus and a chilli lime hollandaise. We were all laughing and giggling about the way it was plated, cause at any angle that we snap a shot, it didn’t look right. haha But those croquettes were amazeballs (very appropriate use of words aye? hehe) !

The croquettes were soft and pillowy in the middle, and filled with smoked salmon, and really crispy on the outside! Went so well with the chilli lime hollandaise. Gave a tangy kick to the dish. Perfect match!

Of course, when the menu has bubble & squeak, you know for sure that the Mr would order it! hehe His came with homemade chicken and sage chipolatas and a spicy tomato relish that was so rich in flavour you wanted more! The bubble & squeak had a similar crispy exterior and  a soft and rich potato middle. Delish! (:

He also couldn’t resist ordering a side of truffled mushrooms which were so delicious. Not an overpowering taste of truffle oil, and every mushroom were so plump and juicy. It was dangerous though, cause they were all so small, you just want to keep popping them into your mouth! hehe So so good!

Of course, I couldn’t go past the smashed avocado with persian feta. I honestly think these two ingredients are a match-made in heaven. The creaminess of the avocado with the richness of the feta. Can’t get enough! hehe And you would think, how can it get any better? It sure can!

A perfectly poached egg with a molten golden middle! Creating a sauce for the dish. I could really have this everyday! With the occasional bacon. We do need to strike a balance of naughty and nice yes? hehe

Our table was filled to all 4 corners and we definitely left with happy and full bellies! (: We will sure be returning back soon especially to get more of that nutella hot chocolate! hehe Do you always order the same things when you head to different cafes? hehe Would love to know your ordering habits! hehe

{Guest Post} Homemade Bacon

Happy midweek ! Hope everyone is having a great week so far. I’m really excited about today’s post, cause for the first time, the Mr is posting as a guest of Food Made With Love! (: If you follow my instagram (@lianneelow), you would know how much the Mr and I love cooking together. The kitchen is definitely our happy place, trying new recipes and creating yummy dishes. Homemade Bacon

Why?

Our usual weekend brunch brought us to Merchants Guild which my wife truly adores! There, we made our choices and I added an additional side of bacon. When it came, this bacon was not the usual bacon you get. Thick-cut bacon. Not something you can easily find or purchase. So that’s why I set off on making my own bacon.

What is involved?

Lots of salt, lots of sugar and anything else which impart flavour to the pork which you want to put in. And of course, a nice big slab of pork belly. The equipment required is minimal if you have a bbq pit somewhere.

Curing the pork belly

Ingredients:

1 slab of pork belly (minimum 2kg)

2 parts salt to 1 part sugar (you can put in any amount you want but keep to the ratio).

Herbs and spices (anything you want; but I used 6 cloves of garlic, 3 sprigs of rosemary, handful of peppercorns, 3 sprigs of lemon thyme, 1 tbs ground coriander and 3 dried bay leaves)

Equipment:

Ziplock bag/Tupperware

Smoker/Bbq

Hickory wood chips

How?

The Curing Process

1. Combine the salt, sugar, herbs and spices into a food processor and blend till everything is evenly combined.

2. Once the cure mixture is done, pack the mixture all over the pork belly, covering the pork with a layer of the curing mixture.

3. Carefully place this into a ziplock bag or into a Tupperware box with a rack at the bottom to allow any liquid to drip.

4. Leave the pork in the fridge for at least 7 days for it to cure and let the curing mixture remove as much liquid as possible. Through the 7 days, check for any accumulation of liquid. Feel free to drain the liquid or add more curing mixture to the pork. At the end of the 7 days, the pork should be of a solid nature and there would be no bounce when pressing into the flesh.

5. Once this is done, rinse the pork under water to remove the curing mixture and allow the pork to dry out more in the fridge uncovered. This also allows a sticky layer to form around the pork which helps retain the smokeness from the next process.

The Smoking Process

1. After leaving the pork belly in the fridge uncovered for a day, the cured meat is now ready for smoking in the bbq. To prepare your bbq, heat the bbq up till the temperature of the bbq reaches 200 degree Celsius.  Prepare your hickory chips by soaking them in liquid for at least half an hour. At this time, you can choose to use any liquid which could impart more flavour to the pork. In my case, I decided to use apple juice (with the understanding that apple and pork go well together).

2. Once the hickory chips are ready, you can either place them with the coals (if yours is a charcoal bbq) or in a smoking box (for electric/gas bbqs) and allow the smoke to fill the bbq up. Once the bbq is ready, place your pork into the bbq and rest it on a rack and allow the smoking process to begin. This will take 2-4 hours depending on how much smokeness you want your bacon to have.

3. Constantly monitor the temperature of the bbq, ensuring it stays around 200 degrees Celsius or an internal temperature of the meat at 150 degrees. Once you feel that you have imparted enough smokey flavour to the bacon, feel free to remove it from the bbq.

The Cutting Process

1. Once you have taken your bacon out of the bbq, you can begin slicing it up, ready for storage or consumption. Please remember that despite the smoking process, the bacon is still not fully cooked and you will need to cook it before consuming it.

2. Firstly, remove the rind of the pork belly which should easily come off. Put that in an preheated oven (200 degrees celcius) for 20-30 mins and enjoy a nice piece of crackling from it.

3. Next, slice the sides off so that you get an even piece of pork belly. These cut-offs can be sliced up into bacon bits for future use.

4. From there, I chose to slice thick pieces of bacon (as I enjoy a thick-cut piece of bacon). If you have a meat slicer, you can slice it up to your desired thickness. If not, just use a knife and be patient with it. In total, I managed to get at least 20 thick slices of bacon from one pork belly. Either keep it in the fridge for quick consumption or in the freezer if you choose to slowly savour it.

5. The next thing to do is fry the bacon up and enjoy the fruits of your labour!

To enjoy the bacon, the Mr whipped up his burger patty (my ultimate fav dish of his) and we had an open beef sandwich with his beautiful fried thick-cut bacon! Let me tell you, the 1 week is definitely worth the wait! It does not taste anything like bacon you buy from the supermarket! The flavours were so good, with a slight hint of apple! YUMMO!

I adore weekends. I am sure you all do too! But weekends just mean one thing for me : A brunch date with the mr! (: It has become a tradition for us to meet each other, after our work on Saturdays, at a new place to have brunch. Just him and I, a little quality time to ourselves doing what we love best – eating! hehe

Latte

We are really quite predictable when it comes to the drinks we order. hehe The Mr always ordered a latte and me? A chai soy latte of course! (:

Unfortunately, the chai soy latte didn’t taste like it was brewed from the leaves and spices. It tasted like it was made from the syrup. Which was a pity. But I only have myself to blame, as I should have ordered a cup of coffee at a place that roasts their own beans! The Mr absolutely adored his latte. It was smooth and really robust in flavour. He was close to ordering a second cup but was too full after finishing his food. hehe So I urge you to try their coffee when you’re there!

As it was really packed that afternoon, it took our food a little longer than usual to arrive. But when it did, it looks so good we couldn’t wait to tuck in! Just love the vibrant colours on the plate. No prizes for guessing what I ordered! hehe

Sweet Corn and Haloumi fritters

To be honest, there were many things I wanted to order when I schemed through the menu, but I just couldn’t resist ordering the sweet corn and haloumi fritters! The thing about corn fritters is it never tastes the same anywhere I go! Some places have them really crispy on the outside, and some places have it a little more like a pancake. This was more like a pancake, and just filled with juicy corn kernels and cubes of cheese! With slightly wilted spinach and rich, buttery avocado and a perfectly poached egg! Everything worked amazingly together, but would be even better with a slight pinch of salt. hehe But still really yum!

The Mr couldn’t go past the ham hock terrine, especially since it comes with roasted field mushrooms and two poached eggs! As you can tell, protein is VERY important for the mr. hehe He also added a crispy, golden potato hash to go with his dish! hehe It was so crunchy on the outside, soft and fluffy on the inside! He was so glad he ordered it! hehe The terrine was moist and just really well seasoned, every mouth was just a burst of flavour, with a kick of spice from the chilli relish! Mmmmm (:

Love that they roast their coffee beans on site and sell it on site! Just look at the different notes of coffee beans they have! Wish we are able to grind the beans and put them into the capsules so that we could use it in our Nespresso machine! THAT would be dope! hehe We’re definitely heading back to try the other things on the menu and  a nice cup of cappuccino would be my choice of drink!

Bosch Masterclass with Ian Curley

Good evening dear readers, hope you had a great weekend and you’re all pumped up for the new week! Time really flies, and it’s already mid-week! Before you know it, it’s the weekend again! How good is that? hehe A few weeks back, I was fortunate enough to be invited by PHD media agency and Bosch Home Appliances to have a Bosch Masterclass led by top chef, Ian Curley! If you’re thinking that Ian Curley looks familiar, that’s because he’s appeared on numerous TV shows – Masterchef and Conviction Kitchen (just to name a few). I was so so excited when I read that he was going to run the Masterclass, especially cause he’s the Executive chef of The European, a place I’ve been meaning to try! So glad I get to have a first-hand taste of some of the dishes they serve in the restaurant! Up close and personal! (:

We were chauffeured to the venue of the Masterclass and they transformed their showroom into a beautiful dining area! I was mesmerised by all the kitchen appliances that was around me! The state-of-th-art cooking tops, range hoods and the built in … (wait for it)… coffee machine that grinds the coffee beans and makes the froth for you all in a press of a button! Of course, I couldn’t go past the different types of ovens they had to offer! I wanted all of them! hehe

Before I share the amazing night I had, be warned that there are heaps of photos to come and mostly would make you very hungry! hehe Might need to eat after you finish reading this post! hehe But hopefully you’ll enjoy it as much as I did that night! Here we go! (:

Filleting a John Dory

We got into the kitchen (at the back of the show room) and was introduced to Chef Ian Curley! I have to say, he looks so fierce but he’s actually really nice and funny! Insisting we take nice photos of him and make him look skinny! hehe Straight after a short introduction, Chef Ian got straight down to business! He decided to cook us a pre-dinner meal of John Dory with cauliflower puree and braised witlof!

Of course, in true chefy fashion, Chef Ian filleted the Joh Dory infront of us, in the matter of minutes might I add! Just amazing!

Lucky for us, everything was prepped so we don’t have to do the chopping, but just the cooking, plating and of course, eating! hehe The best part of all!

The fish was seasoned just before it’s being cooked in a hot pan!

While the fish was pan-frying, Chef Ian started to plate the dish up : the cauliflower puree with cauliflower florets, pine nuts, muscatels and capers. I love how it could do that with his eyes closed and it still turned out looking like an art piece!

To add extra oomph to the dish, bottarga was grated onto the dish! It’s Chef Ian’s current favourite ingredient at the moment! hehe I could definitely understand why! When I saw the bottarga, the only person that I thought of was the Mr, cause he LOVES fish roe! hehe

We were then split into groups to cook different dishes and lucky me was grouped with Miss D (Never Too Sweet) and Agnes (Off The Spork) to make some amazing Beef Wellingtons! By no means was this dish quick and easy, but all the components of the dish just made this dish TO-DIE-FOR! We girls definitely did a great job! hehe Although most of the hard work was already done for us. haha

We were introduced to the ingredients needed for the beef welly and look at how beautiful those eye fillets were! The rest of the ingrdients are : dijon mustard, proscuitto, salt, mushroom duxelles.

The eye fillets had to be seasoned with salt and coated with olive oil before putting into the hot pan to get sealed on both sides! It was important to oil the meat instead of the pan so that it doesn’t smoke out the kitchen! hehe A very good tip when you cook your steaks at home too! (:

Once the eye fillets are sealed (nicely golden brown too!), allow them to rest on a tray and then smear a thick layer of dijon mustard and a whole heap of mushroom duxelles!

It’s then wrapped with a beautiful piece of proscuitto and then instead of the usual puff pastry, the European uses brioche instead as it gives a lovely soft texture! The brioche was then brushed with egg yolk to give it a nice colour!

The beef wellingtons were then placed in the convection and steam oven! How awesome does that sound?? The oven has a steaming function that would bake the brioche as the usual oven function bakes/steam the beef so that it will be juicy and tender! I definitely want one!

The combi steam oven doing it’s magic for 12 minutes! While it’s baking, we went over to the other groups to have a sticky beak! hehe Boy was I glad we did, cause the smell that was filling the kitchen was making my tummy grumble!

One of the groups made crab linguini and we were just in time to taste the dish! One of the tips that were given to us was to only add the basil leaves just before serving the pasta just so it is able to have the added freshness!

Before serving, they crab linguini was topped with breadcrumbs and shaved bottarga! Love the addition of the bread crumbs. It added an element of crunch to the dish! (: So so tasty! My belly was definitely happy after I finished a whole plate!

After being satisfied by the bowl of deliciousness, my greedy belly led me to the next group. They were cooking saffron seafood paella!

The short grain rice are absorbing the goodness of the stock, capsicum, saffron and chorizo. hehe I couldn’t wait to dig in to this dish!

Especially after I saw the amount of seafood that is going into the dish! I’m sure you would want some of this too! Just at this time, the beef wellingtons were ready to come out of the oven and be plated!

While they were resting, we made the button mushroom garnish.

It was a delicious mix if button mushrooms, fresh peas, pearl onions, lettuce, brussel sprouts leaves and bacon! YUMMERS!

Within a circle of pea puree lay the button mushroom garnish, a teaspoon or two of mushroom broth and some mushroom froth. Then the beef wellingtons were sliced into half and served!

Fresh horseradish was grated onto the finished beef wellingtons just before being served! hehe How pretty does that look? So many components and trust me, everything works magically together! The eye fillets were cooked perfectly  medium as well. hehe I have to say though, I do prefer the flakey puff pastry but the soft brioche was a delightful difference! hehe Just like my buttery puff! hehe

Next up, saffron seafood paella! (: Don’t you just want to dive into this pan of deliciousness?? When it was placed on our table, everyone just went “WAH” simultaneously! There was so much seafood, the rice wasn’t even visible at first look! hehe Our kind of paella. haha

We quickly snapped some shots and dugs our (clean) spoons in it! The flavours just burst in our mouths! It was so good and the seafood were all cooked really well! Plump and juicy! (: individual portions

I was already stuffed by the time I finished my wellington. So I only had a small portion! Had to leave some space for dessert! hehe For a moment, I sound like Miss D! haha

After having the paella, we were invited back into the kitchen to have some dessert! Of course, there was a sweet dessert wine to go with it – Yering Station’s Pinot Gris Cold Press! SO SO GOOD! Really need to head to the vineyard to buy some of these to stock up! I personally love sweet wine that’s why Moscato or Reisling is usually my choice of wines. hehe I took the smallest sips so that it could last longer! hehe

While we were busy enjoying our meal, the chefs were busy plating the dessert : olive oil polenta & ricotta trifle! To go with was a stick of puff pastry (YAY!) and some candied walnuts (I wanted to sneak the whole packet home haha). It was my first time having a polenta cake and I loved it! Wasn’t too sweet and added a bite to the dessert. I’ve been a huge fan of olive oil cakes of late, so this was definitely making my belly happy! hehe

I just kept digging and digging into the glass and it felt like it was never ending! At this point, I knew I was filled to the brim and definitely a happy camper!

Before the night came to a close, Chef Ian wanted to show us how easy it was to make pasta from scratch and also how quick and simple a spaghetti marina could be! He whipped out the Bosch MUM86 Professional with a pasta maker attachment and started rolling out the pasta dough that he’s made prior.

In a matter of minutes, he was able to fire up and plate an amazing bowl of spaghetti marinara! Too bad we were all really stuffed, or else I would have loved to have a taste!

I definitely had so much fun during this masterclass! All the different techniques learnt and the delicious food we got to try and attempt cooking. Definitely a night to remember! (: Thank you so much Bosch and PHD agency for this amazing opportunity! Would also like to extend my thanks and appreciation to Chef Ian Curley and his team for holding such a fun masterclass! I enjoyed every minute of it!

To make the night end on a even sweeter note, Bosch has generously given each of us a goodie bag filled with amazing gifts! One which I have been eyeing for the longest time : the stick blender! WOOOHOO! (: Now I can make soups, mayo and sauces in a whizz! Thank you so so much Bosch Home Appliances for everything and for the beautiful night! Couldn’t ask for more!

Ever since moving to this side of town, we’ve been trying to look for good brunch places to dine at on weekends. A month back, while looking for places to celebrate my birthday, I found some gems and visited Merchants Guild with Peggy and her cutie pie, Paige! hehe But there were a few more than caught my eye and we took the opportunity to head to one during the Anzac Day holiday – The Little Ox!

A beautiful interior, at a corner of New Street sits The Little Ox. Its situated in the middle of the estate and definitely a place that many people come by for both a food stop and a coffee stop! When we got there, there was a long line, and I thought that we probably had to wait for a long time for a table. I found out when I walked closer that the people were queueing for take-away coffees! Thankfully we grabbed the last table available outside before the real queue set in!

We ordered our drinks before deciding on what to have for brunch. We all had our usuals! Chai soy latte for me, Melissa had her hot chocolate fix and the mr had a latte. As it was Anzac Day, our drinks came with a small Anzac cookie and it was so good! Not too sweet, and had a touch of rosemary! So interesting! Definitely gonna try that the next time I whip up some Anzac cookies. hehe Unfortunately, they forgot to put on for the mr. haha I shared half of mine! (:

Corn fritters

If you know me well, I will never be able to go past corn fritters as long as it’s on the menu! My favourite by far, are the ones from Replete Providore. This one has definitely come on par! It was crispy and every bite was filled with juicy corn kernels! This was topped with bacon and smashed avocado which I adore! The tomato relish was tangy and cuts the richness of the dish as a whole which was perfect.  Are you salivating while reading this? haha Cause I am! hehe There was also the option of having a poached egg and of cos I wanted one on mine. Cause who wouldn’t right?

I was so glad I did, cause the egg was poached to perfection and the yolk acted as a sauce for the dish! Now, I’m sure you are salivating! Look at the molten egg yolk! hehe Absolutely YUMMOLICIOUS!

When Melissa and I saw the menu while the Mr was looking for a park, we knew what he was going to order. The Mr LOVES his rosti or hash and this has his favourite beet root as well! A clear winner! (: I love how the salmon has the slightest shade of pink! When the plate arrived, it looked like an art piece with pretty colours none-the-less! The salmon was cured beautifully and had the right amount of saltiness. It went so well with the capers and pickles, and the earthiness of the beets. The potato roesti was crispy on the outside, and fluffy on the inside. Just the way the mr loves it! If you look close enough, you would see some housemade chicken, thyme and pine nut sausage! It was so juicy and tender, and tasted delicious!

Melissa decided to have the soft omelette with sauteed mushroom, feta and basil. I think out of all the dishes we had, this didn’t have as much wow factor as the rest! But it was still delicious and flavoursome! Maybe if she added the leg ham, it might have added a oomph to it. hehe

Definitely a place we will be heading back especially since it’s quite near to home! (: Especially for more corn fitters!
