Good afternoon dear readers, I hope you’re having a great weekend so far. I definitely am! Wish I could sleep in more and how I wish we had an extra day of weekend just to anything we love. How good would that be? Any who! It’s the weekend should we should all just embrace it! hehe I’ve got some exciting news to share! Remember the Taylors Wine giveaway I did a few months back? They decided to send me a different type of wine each month to come up with a dish and share the recipe! This month, I chose their Taylors Estate 2010 Clare Valley Shiraz.

Before the wines even arrived, I already had a few ideas in my head. But after reading the palate notes, there was only one dish that came to my mind : beef ribs ! The wine was really smooth and robust, with notes of plum, blackcurrant and dark cherries! Yum! I am by no means an expert on wines, but it is really easy to drink, and not too dry!

What I love is the intensity of the colour of the ribs and sauce! A deep red colour especially after it’s been cooking and reducing in the oven. And what’s better than tender, melt-in-your-mouth pieces of meat? Absolutely nothing! hehe

And I was debating if I should make a creamy mash to go with it, but because I’m in a current cauliflower phase (check out the cauliflower rice that I’m addicted to!), I decided to make some cauliflower puree which paired perfectly with the ribs! Plus it’s like killing two birds with one stone, cause I didn’t need to make a side of greens! hehe But just to make the dish have some kind of crunch, I sauteed some cauliflower florets with toasted hazelnuts. AMAZING!

So go get yourself a bottle of Taylors Wine Clare Valley Shiraz and give this a shot! You won’t regret it, my tummy assures you! (:

Slow Cooked Shiraz Beef Ribs (A Food Made With Love Original)

2 kg beef short ribs

500ml Shiraz

500ml beef stock

1 heap tbs tomato paste

2 tbs olive oil, extra for sealing the ribs)

2 tbs passata

1 bulb garlic, cut into half

2 large chillies, deseeded and roughly sliced

salt and ground black pepper, to season

Steps :

1) Preheat oven to 160 degrees Celcius. Season the beef ribs generously with salt and ground black pepper. Heat a heavy based pot (I used my cast iron pot) on high and add some olive oil. Seal the ribs on all sides and set aside.

2) In the same pot, add the tomato paste, passata, garlic, chilli and the shiraz. Bring it to a boil and allow it to reduce by half.

3) Return the beef ribs into the pot and add the beef stock, making sure it covers at least 3/4 of the ribs.

4) Bring it to a boil, then cover and place the pot into the preheated oven and allow it to cook for at least 2 hours, or until the meat falls off the bones, and the liquid has reduced to a sticky and thicker consistency. The colour of the gravy has also become an intense red!

5) To serve, place the beef ribs on the cauliflower puree (recipe to follow) or a rich and velvety smooth mash, top with the cauliflower florets and hazelnut and drizzle the thick and luscious gravy. DIG IN!

Final dish

Cauliflower Puree (recipe from Manu’s French Bistro)

500g cauliflower florets

200ml milk

50g unsalted butter

sea salt and ground black pepper

Steps : 

1) Place the cauliflower and milk in a large saucepan and bring to a boil. Simmer over medium heat for 8-10 minutes or until the cauliflower is tender, then drain and discard the milk.

2) Place the cauliflower, butter, salt & pepper in a food processor and process still you get a smooth puree. Transfer to a clean saucepan and keep warm.

Cauliflower Florets & Hazelnuts Mixture (Recipe from Manu’s French Bistro)

50g hazelnuts

200g cauliflower, cut into small florets

50g unsalted butter, cubed

Steps :

1) In a small frying pan, toast the hazelnuts until golden brown. Place them in a clean tea towel and remove the skins by giving it a rub. Place them in a plastic bag, crush them slightly, using a rolling pin. Set aside.

2) In a larger frying pan, melt the butter over medium heat. Add the cauliflower florets and cook for 5-6 minutes or until golden and tender. Add the hazelnuts and stir to combine. Transfer to a bowl and keep warm.

Fritters & French Toast Heaven : Fitzrovia

Dear readers, have you ever met a friend who you haven’t seen for a long time? I have recently, and the last time I met Gazel, we were 12. So when she was in Melbourne for a holiday, we decided to meet up. Our first meet up was at Top Paddock, and we decided to meet before she heads back to Singapore as well. And thankfully she loves brunch too, so we decided to head to Fitzrovia (thanks for the recommendation Daisy!) !

It was a perfect location as Gazel wanted to get some salted caramel and Cacao was just across the road! hehe so we were set on Fitzrovia and when we stepped into the cafe, it was really busy but we got our table in less than 15 minutes! Which was perfect, cause seeing and smelling all the food being served around us made our tummies rumble!

Latte

I decided to order a latte instead of my usual chai latte, cause the house blend was from St Ali. I am no expert on coffee, but this was my second cup of the day as Gazel bought me my first cup of coffee from her favourite cafe : Brother Baba Budan! So I decided to have decaf, and I really enjoyed this cuppa, smooth and creamy!

Gazel loves her coffee. She is currently having withdrawal symptoms as she can’t get the same quality of coffee back in Singapore. It’s just not the same! She was prepared to have at least 3 cups of coffee everyday before she left. haha This was her second cup of the day too, so she also ordered decaf!

While waiting for our table, we had a quite browse of the menu and we kinda knew what we wanted there and then! My choice was the sweet potato and caramelised fritters, which is of no surprise, cause I absolutely love fritters of all kinds! haha But this had everything I truly love on a plate! The moment it was served, the first smell that hits you is the truffle in the salsa verde! That instantly puts a smile on my face. I couldn’t wait to taste everything on the plate! The fritters were really fluffy and the grilled saganaki. HOLLY MOLLY! It’s similar to haloumi but the crust is crunchy! Amazing!

Gazel ordered, what I think, is the breakfast of champions. Creme brulee french toast, with Istra bacon, bananas, whipped mascarpone and toasted pecan. The french toast… actually has that crunchy layer of burnt sugar and after biting (cracking)  that layer, the toast melts in your mouth!

And there’s something magical about the sweet and salty combination isn’t there? Especially when the salty component is BACON! Noms! You really can’t go wrong in this dish! WIth fresh bananas and a creamy whipped mascarpone. I definitely want to head back to have this!

So if you love your fritters, and you also love french toast, I urge you to head to Fitzrovia pronto! hehe You will definitely not regret it! We definitely didn’t and left with happy bellies! hehe

Yarra Valley Chocolaterie : Hot Chocolate Festival

I have a love-hate relationship with chocolate. More love than hate of course. But after scoffing down too much chocolate, that’s when the hate sets in. But it doesn’t last for long. My love for it is overpowering. haha So you can imagine my face when I walked through the glass doors of the Yarra Valley Chocolaterie! Yeap! You guessed it right! Wide grins, round eyes and I marched straight to the huge bowls of chocolate that are for free tasting. How generous! But just so I don’t look greedy, I just took a (heap) tablespoon full of the dark chocolate buttons and stepped away.

Hot Chocolate Festival

It wasn’t my first time at the chocolaterie, but this time I was really lucky to be asked to the Hot Chocolate Festival by Yarra Valley Chocolaterie & Q Strategies to try 8 out of the 31 limited edition flavours they’ve come up with for the month of August! I went with the blogging gang (Shellie, Daisy, Thanh, Agnes & I-Hua) and we were allowed to bring our partners (and Melissa!) along, so it was like a fun road trip with a whole huge foodie gang!

These were the 7 + 1 flavours we tried that morning. Yes, we had hot chocolates for breakfast! hehe What could be better yes?

Josh - Head barista

We were introduced to Josh, the head barista at the chocolaterie. He’s the one who comes up with all the different flavours! Amazing! From the moment we gathered infront of him, pots and pots of hot chocolate arrived and were served! We were definitely in hot chocolate heaven!

Each cup (thank goodness they were mini ones!) had a different topping to match the flavours!

So without further ado, here comes the hot chocolates! I’m introducing them in the order that we were having them! Of course, I have my top three choices of the morning and you’ll see them next to their flavours! hehe So, first up….

Gingerbread

Gingerbread (2nd place)! This was made using their milk couverture chocolate and had quite a strong cinnamon and ginger taste to it, which I love! It was served with some gingerbread crumbs which gave a slight crunch to the drink.

Mint madness

Next up was mint madness! This was also made with their smooth milk chocolate and served with a fresh mint! I actually quite enjoyed this, as it reminded me of an After Eight chocolate! hehe and I absolutely love those thin pieces of chocolate! hehe

Cookies & Cream

Cookies & cream was somehow known as the King Kong of all flavours made with smooth milk chocolate and topped with crushed oreo cookies! This was delicious but it kinda of tasted like normal hot chocolate, and nothing too special. Though the crunch of the cookies added a good texture!

I’ve been into coconut everything these days, so I was quite excited when I saw Pina Colada (3rd place) on the tasting menu! It had a strong coconutty flavour made with white chocolate and topped with toasted coconut! DELISH! hehe It was quite a favourite among us that day to be honest!

Indian Chai

When the next flavour was indian chai, Shellie and I were smiling at each other, as we both love our chai! Unfortunately, the dark chocolate was a little overwhelming and I couldn’t really taste the chai spices. Sad face! I really thought this would make number 1 on my list!

Snickers

This, ladies and gentlemen, is SNICKERS! The champion of the day! It was so delicious, and it really felt like you were having a snickers bar. It was nutty and chocolatey. Everything a hot cup of hot chocolate needs! Topped with roasted slithers of almond – A perfect cup! I secretly wanted another cup! haha But had to safe some space for the two more to come!

Lemon myrtle

If you’re a fan of lemony and citrusy drinks, this would be the one for you! I never thought that lemon would go well with chocolate. But after drinking this, your mouth is left with a subtle taste of lemon, kinda refreshing! Each cup is topped with a candied slice of lemon.

Jaffa

Our last cup for the morning was Jaffa. It was a special addition to the tasting menu we had! Before we could taste it, Josh grated some orange zest and the aroma of oranges just filled the air!

Handmade marshmallows

After all the hot chocolates, we were also introduced to some handmade marshmallows! There were 4 flavours (from top) : tropical, vanilla, strawberry & chocolate ! They were all so FLUFFY (imagine me saying this in Agnes’ voice, from Despicable Me! haha) !!! Loved it and they weren’t overly sweet! I had to stop at one though, cause I definitely reached my sugar quota for the day! hehe

After the private tasting session, we walked around the chocolaterie and it was like being in Charlie and the Chocolate Factory! Every where you walked to, you would see chocolate of all kinds!

So do go and visit the chocolaterie before the end of August and taste all the different flavours of hot chocolate they have to offer and hit a sugar high! (: You’ll definitely enjoy it as much as we did!

Milo Brownie Pound Cake

MILO. Just the thought of it brings me back to my childhood. Milo was something I grew up drinking. A cup everyday and even when I was older, I would still love drinking it. And yes, eating it by spoonfuls too! Don’t be shocked! I’m sure lots of you do it! heh I remember when we had to do the yearly cross country run (more walk than run to be honest haha), the one thing that we all look forward to was the milo van at the finishing line!

These days, what I would sometimes crave for when I’m back home in the heat is some ice milo or even milo dinosaur, which is pretty much ice milo with a whole heap of milo powder on top. Can you say YUM?!! Can’t get enough!

So when I came across this recipe of a milo cake on Pencil Kitchen, I couldn’t wait to start baking to taste it! I have to admit though, I probably overbaked mine cause it didn’t come out as gooey and light like hers, but after warming it up before eating it, it was still pretty delicious! Definitely tasted like having a warm cup of milo! So definitely gonna make this again, but cutting down my baking time!

Milo Brownie Pound Cake ( Recipe closely adapted from Pencil Kitchen )

175g butter, room temperature

150g caster sugar

3 eggs

1 tsp vanilla bean paste

200 ml milk

200g milo powder, extra 50g for dusting

a pinch coffee granules

40g cocoa powder

200g all purpose flour

1 tsp baking powder

2 pinch salt

1 tbs salted butter, melted

Steps : 

1) Preheat oven to 175 degrees celcius.  Prepare a 9×9 inch springform baking tin by lining the bottom with grease proof paper and lightly coating the interior with olive oil.

2) Dissolve 100g of milo powder and coffee granules in milk. Heat it a little to allow it to dissolve quicker. Set it aside and allow it to cool completely.

3) In a large bowl, sift the flour, 100g of milo powder, cocoa powder, baking powder and salt. Set aside.

4) In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, and beat till just combined. Stir in the vanilla bean paste.

5) Add the flour mixture and milo milk alternately, starting with the flour mixture.

6) Pour the mixture into the prepared baking tin and spread it out to make sure it’s evenly spread. Bake the cake for 30-40 mins (nothing more as it will overcook!) and allow it to cool in the tin for 10 mins.

7) Carefully release the spring and invert the cake onto a cooling rack. Brush the top with the melted salted butter and dust with 50g of milo powder.

Slice and enjoy it as it is, or zap it in the microwave to have it warm with a scoop of your favourite ice cream! (:

Bayte : A Lebanese Feast !

Brunch at Bayte

I know I’ve said numerous (countless) times, how much I love brunch. But I need to say it again. I LOVE brunch! Especially since there are so many different varieties of brunch we can get here in Melbourne. The first time I went to Bayte, I went with 3 beautiful ladies (Ashley, Lee & Sofia) and as it was my first time meeting them, I was a bit too nervous and didn’t get to snap photos with my camera! haha So it was due to head back and have brunch, this time with some of my favourite and closest friends.

Yes. This my dear readers is my favourite girl who steals my heart every time I see her, Paige. hehe Isn’t she just gorgeous? hehe She was all smiles that afternoon and couldn’t stop playing with us and have short burst of laughters! Just absolutely adorable! hehe Such great company we had for brunch that day!

Story behind Bayte

The menu is a true reflection of what lebanese food is and should be. Full of robust flavours and worth celebrating about! Chef Julie Touma came up with the menu which was inspired by her grandmother’s recipes! Just reminds me of how much I miss both my mum’s and grandmother’s home cooking and how I am constantly inspired by them too! (Can you tell I’m a little home sick?) Bayte means home in Arabic, and you definitely feel welcomed the moment you step in. I couldn’t wait to have the food again and definitely couldn’t wait to have their freshly brewed chai!

Chai soy latte

Their freshly brewed chai was with Bonsoy (my favourite) and had flavours of cardamom and cinnamon. Definitely hit the right spots! hehe If you would like an extra kick and you’re a coffee lover, ask them for a shot of espresso in yours. The combination is DA BOMB! I recommended it to Peggy as she loves both chai and coffee, and she really enjoyed it! She even said it was nicer than the chai itself! But I do love my chai pure. hehe

I really wanted the baked eggs as it had everything I was craving for. Perfectly cooked eggs (which were still molten and gooey), with an okra and tomato spiced stew and shanklish cheese! OH-EM-GEE! It was love at first bite! The cheese was the right amount of richness and hit of salt and had a crumbly and soft texture. The okra was so soft and the stew had the right amount of spice to leave a warm and fuzzy feeling in your mouth and tummy after! A perfect winter warmer! I couldn’t be happier and more contented with my choice! (:

Poached eggs

Peggy had the zaatar spiced poached eggs with a pumpkin and pinenut kibbeh and hummus, with some freshly made flat bread. The zaatar had a nutty flavour to it and the eggs were perfectly poached! The bread was so delicious that even our youngest foodie enjoyed it!

If you’re hungry and you would want to try a bit of everything from the menu, then the breakfast mezza for one (there is for two as well) is for you! That’s exactly what the boys went for! I mean, why wouldn’t they? It’s like the best of what the kitchen has to offer all on a plate. I have to say, the lamb skewer was delicious! Even for a person who doesn’t eat lamb! hehe

It even came with a spiced fried egg! A celebration of lebanese food, a party in their mouths!

Melissa decided to have the sumac spiced fried eggs with kafta lamb skewers and baba ghanoush. I could have ordered a whole plate of baba ghanoush to myself! Smooth and creamy mashed eggplant and went perfectly with the spiced lamb! Nomtastic!

So the next time you’re thinking of having something different for brunch, do head down to Bayte! You will definitely not regret it! Amazing food with friendly staff and great company! There’s no better way to spend the weekend, really! I do hope you all had a brilliant weekend too!

Postcard from Barcelona : Tapas Heaven

Hola ! (: How I wish I was back in Barcelona, basking in the sun! Going through the photos is making me miss Europe heaps and there are some places that I travelled to and delicious food that I had I really want to share with you!

La Boqueria Market

Markets. Don’t you just love them? I can’t get enough of them! While I was planning my itinerary for Barcelona, the first place that got on my list was the Mercat de Sant Josep de la Boqueria! The moment you enter through the La Rambla entrace, you are greeted with fresh juice, colourful fruits, plethora of nuts and more juice! Walking through the aisles was like a kid walking in a toy store, I wanted to get everything!

There were so many different combinations of juices and even smoothies! Was so amazing! What’s even better is that some stalls (along the sides) were selling them for €1! How cheap is that! We would drink at least one every time we were around the area! hehe

Fruits

Fresh fruits were all arranged so neatly and the colours just popped! All of them were seasonal and oh-so-fresh! You just wanted to buy some and bite into them immediately!

Sliced watermelon

These caught my attention as I was walking through the aisles! The watermelons were sliced and served with a fork for the convenient of visitors!  I was in awe with how much pride and care they took with their produce. Amazing!

I couldn’t stop smiling when I saw how huge the fresh dates were! I immediately bought a couple to try and they were so good! Plump and sweet! Some were even stuffed with pistachios. YUMMO! hehe Have you fallen in love with this market yet? hehe There’s more to come!

We were totally in Jamon heaven!! Everywhere you walk to, every turn you make, there would be a stall with legs of jamon hanging around and packets of beautifully sliced ones. They smelled heavenly, and you wouldn’t be able to resist buying a packet or two. hehe

Bottarga and tuna jerky

Don’t eat meat? How about fish? hehe These definitely reminded me of my brother and I couldn’t not get him some! The fish jerky was delicious and it went perfectly with some table water crackers. hehe And of course, the beautiful bottarga. Wished I could bring it back to Melbourne! Would love to use them in my cooking!

SHROOMS! I was in heaven. So many different varieties. You name them, they have them!

These made my heart skip a beat! Wild strawberries! hehe The first time I’ve seen them and within my reach! Of course, I bought one. haha I remember Jamie Oliver using them in a dessert, so I couldn’t wait to try them! Some were like sugar, but there were some that made my face cringe. haha But they all had an intense strawberry flavour though! hehe

By now, you would be wondering, where is the tapas? Or the cooked food??

Here it is! Just next to a stall that sells fresh seafood, they have a stall that fries them up and we can have it piping hot! hehe Even my mum who doesn’t usually have fried stuff or baby squid, couldn’t resist!

We didn’t stop at one! haha Crispy golden crunchy deliciousness! Everything was fresh with a subtle sweetness. The only thing I didn’t dare to try was the barnacles.

The Mr was super excited to try these. But just how it looks makes me take a few steps back! haha To give it credit though, the mr said it tastes quite like crab meat! hehe In fact it has a outshell that you have to pop and pull the flesh out. hehe Till now, the picture is making my hair stand!

Even after all those food, we still needed to have lunch! hehe I read many reviews and there were lots of people recommending the Pinotxo Bar, so the tummy led me there! hehe

Friendly staff greeted us and told us what was on the menu today. It changes according to the freshest catch they can get that day!  hehe Of course there are a few signature dishes that would be be constantly on their menu.

Bubbly and beer

They only had bar seats or high tables, and we went during the peak hour so there were only the high tables left. The high tables were out in the sun, so we ordered bubbly and beer, which were perfect to cool us down.

The good thing about tapas is that we could order lots of varieties and try almost everything on their menu! First thing we had was croquettes! They had many kinds : mushrooms, ham, mince and cod ! Mushroom was my favourite. A really strong flavour of porcini in every bite! Crispy on the outside and soft and pillowy on the inside – DELISH!

Mussels! So fresh and sweet, and goes so well with a tangy salsa.

The steamed clams were also really fresh, plump and sweet! They were more like cockles, but I think they call is clams here. hehe Drizzled with extra virgin olive oil. Perfect!

Fried peppers

The Mr couldn’t resist ordering a plate of deep fried peppers. They were sweet but leaves a hit of chilli in our mouths after! Accompanied by crackles of salt with every bite. I have only one word to describe this – ADDICTIVE! hehe

Cod and lentils salad

This is their signature, and a must order! Their cod and lentils salad was drizzled with some balsamic vinegar and olive oil. The cod had the right amount of saltiness, and we just couldn’t stop! Such a good balance of flavours! Wish I could make it at home!

This was one of my favourites! Baby squid with cannellini beans and black ink. So tasty and lip-smackingly good!

This, ladies and gentlemen, is the chickpeas with meat. It was absolutely delicious and every single chickpea you bite through is tender and just full of flavour. I can see why it was highly recommended by many! Absolutely loved it!

And just before we left, the staff told us the boss wanted to take a picture with us! How cute is that? hehe He came out from behind the bar to snap a shot with us (: You must be wondering, where is the Mr? He was at his conference, but don’t worry, we went back and ate all the same dishes with him another day! hehe I sure as wasn’t gonna let him miss out on this! Too delish!

So you can definitely see why I love this place! Endless food opportunities and you can let your taste buds run wild! hehe So the next time you’re in Barcelona, definitely head down to the La Boqueria market! I assure you, you won’t be disappointed!

You and I both know I absolutely love brunch. But during the week, it’s impossible to have brunch due to work and more often than not, I end up having a slice of toast with either peanut butter or vegemite and out of the door I went! But I really wanted to have something healthy and good in the morning to keep me full for most of the morning before lunch so I decided to make my own granola to go with yogurt! Mmmm (:

I also wanted to try using something I’ve never used before, but has been on my mind for a while now – Molasses. A dark and viscous by-product of the refining of sugar cane. The health benefit of molasses is its high mineral content. It’s wheat, dairy, lactose, gluten and yeast free! It smells and tastes quite similar to gula melaka hehe I like it!

It’s not as sweet as honey, but still makes the granola yummy! (: Had to take that risk, but so glad I did. hehe I tried baking a cake with it, but I think I probably used too much and the taste over took the whole cake, so I’m sticking to sugar for my cakes. haha Or honey! But for granola, it was perfect! hehe

The best thing about this recipe? You could pretty much add what you love and it will still work! hehe I ransacked my whole pantry and took out everything I wanted and tossed it in the mix!  There were a few things I really wanted in my granola this time : toasted coconut and crystalised ginger! It was a combination I came across at the awesome Borough Market in London during my recent trip! hehe So here we go! (:

Gingery & Coconutty Granola (A Food Made With Love original recipe)

1 cup shredded coconut (toasted till brown, set aside)

3 cups rolled oats

1 cup slivered almonds

1 cup roughly chopped walnuts

1/2 cup pine nuts

1/2 pistachios, roughly chopped

1/2 cup unsalted cashews, roughly chopped

1 tsp ground cinnamon

3 tbs olive oil

3 tbs molasses

1 cup raisins

1 cup goji berries

shredded coconut (before toasting)

Steps :

1) Preheat the oven to 150 degrees celcius. In a large bowl, place the rolled oats, mixed nuts and cinnamon. Give it a good toss to so that they are well combined.

2) In a small pot, heat the olive oil and molasses on low heat till smooth. Drizzle over the oats mixture and mix till well combined.

3) Pour the mixture on a line tray and bake for about 35-40 mins, stirring every 10 minutes.

4) Remove from the oven and allow it to cool slightly. Pour it back into the large bowl, and mix in the raisins and goji berries. Once the mixture is completely cooled, stir in the toasted coconut.

Enjoy on its own (it makes a great snack!) or with your favourite yogurt! (:

Good evening dear readers. I hope you’re having a great weekend so far! Mine has been really relaxing, trying out new recipes and cooking up a storm in the kitchen. It definitely felt good cooking and baking again after quite a long time! One of the things I tried is dry mee siam. hehe If you don’t know what mee siam is, it is a malaysian dish and is similar to fried rice vermicelli with lots of aromatics to make it flavourful and delicious! It’s usually comes with a gravy, but I do prefer the dry version. Every mouthful makes me nostalgic!

As my sister-in-law says, it brings the taste of home (有家的味道) ! I was quite worried about how it would turn out, but it was pretty good for a first timer! hehe And quite simple as well! Just blend all the aromatics together, fry, add stock, rice vermicelli, viola! Definitely something you can consider making during parties! I topped mine with prawns, fried beancurd, chinese chives and crispy fried shallots! But you can top it with anything you like, for meat lovers, you could shred some chicken in as well! heh So what are you waiting for? Give it a try!

Dry Mee Siam (adapted from Valee Belly & To Food With Luv)

1 packet of rice vermicelli (about 400-500g)

300g bean shoots

300g prawns, shelled and deveined

100g fried beancurd/ firm toufu, sliced and fried till golden brown

3 hard boiled eggs, cut into halves

10 stalks chinese chives, finely chopped, extra for garnish

2 tbs vegetable oil

2 cups chicken stock

2 tbs fish sauce

2 tbs tamarind paste

2 tsp brown sugar

ground white pepper

fried shallots

1 lime, cut into wedges

Aromatics / Spice blend : 

5 cloves of garlic

10 shallots

20g belachan

55g dried shrimps, soaked and drained

3 heap tbs sambal chilli

2 tbs fermented yellow beans/taucheo (I used crushed salted soya beans)

Blending the aromatics

Steps :

1) In a blender, place the garlic, shallots, belachan, dried shrimps, sambal chilli and fermented yellow beans. Blend till it becomes a fine paste.

2) In a heavy based frying pan or wok if you have one, heat the vegetable oil on high heat. Add the prawns and fry till its cooked through. Set it aside. Fry the blended aromatics for about 8-10 minutes, till fragrant. Remember to keep stirring it so that they do not burn.

3) Add the chicken stock, fish sauce, brown sugar and tamarind paste and bring the mixture to a boil, lowering the heat and allow it to simmer for 5 minutes.

4) Add the rice vermicelli and bean sprouts and mix well till well combined. Toss it well to make sure the rice vermicelli is well coated and the liquid is absorbed and almost dry. Add the chives and give it another good toss.

5) To plate, place some dry mee siam on the plate/bowl, top it with hard boiled eggs, fried beancurd, prawns, more chives, fried shallots and a wedge of lime. Remember the lime as it gives the dish a sourish and refreshing kick!

Going Healthy : Cauliflower Rice Salad

Hola dear readers! Obviously I still wish I am back in Barcelona. hehe Have you ever felt the need to cut down on food and eat better? After all the good food (and don’t get me started on the amounts haha) that I’ve eaten in Europe, I decided to try and eat a little healthier when we got back. The thing that has been going around alot these days is the Paleo diet. Don’t worry, I’m not on it! haha I, for one, cannot go through a diet for the life of me. Plus my dearest husband will never allow me to. He’s a firm believer of exercise and eating everything in moderation. hehe But there are a few recipes out there which caught my eye and I’ve written down in my recipes-to-try list! hehe One of which is the cauliflower rice!

Cauliflower rice

I was intrigued by the cauliflower rice ever since I’ve seen it on instagram  (follow me on @lianneelow). It’s not rice, but it’s cauliflower that is made to look like rice, and it’s absolutely delicious! hehe There are many different ways to make it and there’s no right or wrong way. The best thing about it is that you can flavour it any way you want! Absolutely anything that you fancy!

I had mine two ways. One as a substitute for rice/quinoa (with dishes) and another in a salad! They both worked really well but I am addicted to the salad. Which is the recipe I’ll be sharing with you today. And trust me, even though you don’t intend to change your diet, this is something you definitely should try making! Plus, there’s no harm in having something healthy yes? hehe

Cauliflower Rice (Adapted from Nom Nom Paleo)

1 head of cauliflower (cut into small pieces)

3 shallots, finely sliced

1-2 tbs olive oil

1 tsp garlic salt

1 tsp ground ginger

1 tsp ground coriander

A bunch of fresh coriander, roughly chopped

Freshly ground black pepper

Steps : 

1) In a food processor, pulse the cauliflower into the size of couscous or rice grains.

2) In a heavy-based pan, heat the olive oil and sautéed the finely sliced shallots until its soft and aromatic. When it’s softened, add the cauliflower and stir until it is well coated and mixed thoroughly.

3) Season the cauliflower rice with the garlic salt, ground ginger and ground coriander. Cover the pan and allow it to cook for 5-10 minutes. Season with freshly ground pepper and fold in the fresh coriander.

Cauliflower Rice Salad (Original recipe)

2 cups cauliflower rice

200-300g butternut squash, cubed

1 tsp smoked paprika

1 pint cherry tomatoes (250g, sliced into halves)

Juice of 1 lemon

3 tbs extra virgin olive oil

1 can of chickpeas, drained

salt & pepper, to season

handful of fresh coriander, roughly chopped

Steps :

1) On a lined baking tray, place the butternut squash and sprinkle paprika and salt. Drizzle some olive oil over. In a preheated oven (180 degrees celcius), bake the butternut squash for 15-20 minutes, or until the squash is tender. Remove from the oven and set aside to cool.

2) In a small bowl, emulsify the oilve oil with the lemon juice and set it aside.

3) In a large bowl, place the cauliflower rice, then top with the butternut squash, cherry tomatoes and season with salt & pepper. Drizzle the emulsified lemon juice and olive oil and add in the chopped coriander. Give it a good mix until well combined.

4) Eat it by the spoonful or keep it in the fridge for up to 3 days.

I had mine with some extra pine nuts and a hard boiled egg for some extra protein! hehe See, you can have it anyway you fancy!

I’m back, I’m back, I’m back! I’m finally back from my travels around Europe! Hope all of you have been well and hooray it’s the weekend!! Can’t believe three weeks have zoomed past that quickly, but it’s really good to be back! The one thing I really miss is having my weekend brunches and my chai soy lattes! I don’t think I’ve had as much coffee in a year as when I was in Europe! and of course, I’m so gald to be back blogging and sharing with all of you again! hehe

One thing I really love about being in Melbourne is the new cafes popping up almost every other week! hehe One that opened just over a month now is Tall Timber. I read about them on Broadsheet and saw instagram pictures of their noms and decided that I needed to make a trip down, pronto!

I went there when it was 2 weeks young, and already there was a long queue and the small cosy cafe was packed and buzzing! Not surprising though, as they were the same talented gentlemen behind the establish Coin Laundry & Station Street Trading. Seeing the crowd made me very excited and just can’t wait to see what they had on the menu.

Latte and Chai Soy Latte

The Mr and I had our usual cuppas – large latte for him; chai soy latte for me. Warm and definitely comforting! There’s just something about chai lattes for me. I can’t get enough of it! hehe The coffee beans are roasted on site and are from Niccolo. The Mr liked the blend, smooth and not overly rich. It’s so robust that you can even smell the aroma even before you walk through their doors!

Now for the food! I was really drawn in to the breakfast board but sadly, they ran out of it that afternoon. But something else caught my attention.

Portobello mushrooms

The portobello mushrooms with goats curd, sprinkled with almonds and drizzled with balsamic was mouth-wateringly good! How beautiful does it look on the plate? The colours just pop! hehe I’m not one who like goats cheese, but this goats curd wasn’t too strong, in fact it was creamy and smooth. If you know me, you know I love textures in my food, and this one has them all! Soft, crunchy, chewy! With sweet, tangy, salty and peppery all in one bite! Mmmm! (: Definitely a dish I highly recommend!

Bean cassoulet with pulled pork and chorizo

While I had the vego option, the mr needed his protein and meat! hehe So he decided on the bean cassoulet with pulled pork, chorizo, goats cheese and a perfectly poached egg! Perfect amount of spice from the chorizo, the pork was tender and the dish on a whole packed a punch! hehe

Tall Timber is definitely a place we will return soon! Gotta get that breakfast board! (: Friendly staff, great food. And if you’re around the area and you like your coffee, this is definitely a place to visit, even for one on the go!
